Gluten Free Chocolate Chip Cookies with Almond Flour
Ingredients
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ½ cup salted butter, room temperature
- 1 tablespoon vanilla extract
- ½ cup maple syrup
- ½ cup chocolate chips
Instructions
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in butter, vanilla, and maple syrup until dough forms
- Remove blade from processor and stir in chocolate chips by hand
- Scoop dough one tablespoon at a time onto two parchment paper lined baking sheets
- Bake at 350°F for 7-10 minutes
- Cool for 15 minutes (do not handle prior or cookies will break)
- Serve

Unfortunately, the gluten free diet was not enough to heal my gut. I took things a step further, eliminating rice, quinoa, potatoes, and corn which helped give me some relief from digestive issues and multiple sclerosis symptoms.
The Grain Free Diet
At that point, I went on a strict grain-free diet.
I became even more committed to this way of life when my son was diagnosed with celiac disease in 2001.
Diet restrictions for a little one are super tough, so I made it my mission to create delicious healthy treats for my 3 year old kiddo –he’s now 24 years old!
My easy recipes for dessert were created for him, and they are all gluten-free, grain-free, and lower carb.

I just made this cookies and they come out just like the picture. I used Wellbee’s brand super fine almond flour.
I did substitute the maple syrup because I am on doctor ordered special diet for candida and SIBO where only a few sweeteners are allowed. Instead of the maple syrup I used 1/4 cup of Walden Farms sugar free pancake syrup (yes, I know its full of icky ingredients & chemicals, but only used for a rare treat like these cookies) and 1/4 of Swerve sweetener. I did chill the dough for a few minutes in the refrigerator while the oven heated. Perfection!

I just tried this recipe. I do not know why but my baking time is way over 14 minutes. They are still a little doughy in the middle. I live in MN and I ended up microwaving the butter. I used the recipe to the T. They browned but were soft to the touch when I took them out. They did not spread out much at all. I like the recipe. Has this ever been tried with chia seeds? I figure maybe they will stick together better. Did I do anything wrong at all?

These were fantastic! How should I store them though…we can’t eat them all in one day, and I found that they stick together and fall apart when stored room temp in a closed container. Store in the fridge?? Is this dough freezable? Thanks in advance!

Amy, if you can believe it I haven’t ever stored these, they get eaten so fast by the boys and their friends. You might experiment with wrapping them in parchment and refrigerating in a container. I’m so happy you thought they were fantastic!

My husband and I just started paleo from new years and we both love love loveeee desserts. So, it was getting to us that we werent able to eat any desserts.
