Gluten Free Chocolate Chip Cookies with Almond Flour

Ingredients
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ½ cup salted butter, room temperature
- 1 tablespoon vanilla extract
- ½ cup maple syrup
- ½ cup chocolate chips
Instructions
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in butter, vanilla, and maple syrup until dough forms
- Remove blade from processor and stir in chocolate chips by hand
- Scoop dough one tablespoon at a time onto two parchment paper lined baking sheets
- Bake at 350°F for 7-10 minutes
- Cool for 15 minutes (do not handle prior or cookies will break)
- Serve

Unfortunately, the gluten free diet was not enough to heal my gut. I took things a step further, eliminating rice, quinoa, potatoes, and corn which helped give me some relief from digestive issues and multiple sclerosis symptoms.

At that point, I went on a strict grain-free diet.
I became even more committed to this way of life when my son was diagnosed with celiac disease in 2001.
Diet restrictions for a little one are super tough, so I made it my mission to create delicious healthy treats for my 3 year old kiddo –he’s now 24 years old!

Here are some tips/modifications I make:
1) it’s important to let the butter become room temp naturally…don’t nuke it to make it soft. This may help with those experiencing excessive cookie spreading.
2) After I mix all the ingredients, I pop the bowl into the fridge for 15 minutes or so. Letting the butter chill up again makes them easier to handle (and may also help with controlling the over-spread while banking).
3) I add chopped walnuts and I normally add more chocolate chips than the recipe calls for. I do not alter the rest of the ingredients or amounts at all.
4) Once I let them cool as Elena instructs, I put them on a plate or container, wax paper between layers and let them stay in the fridge overnight. The next day they are just as crunchy as the real thing.

I used Honeyville Blanched Almond Flour. Always keep it in the fridge. I Wonder… Do all ingredients need to be room temperature? I used maple syrup out of the fridge too.

Mine also come out very flat. I thought it may be that my baking soda was old. New baking soda did not help. They are still VERY GOOD! But, they are more like crackers than cookies. I use the Red Mill Almond flour. I have also used the Hodgson Mill flour which is not as fined ground with the same results, yummy but flat.

I had the same problem. My cookies bake flat if I use cold butter or cold almond flour. They bake perfectly if all my ingredients are room temperature.

Hello, I’d love to try this recipe but I can’t have a lot of sugar, so I need to substitute the maple syrup as I’m currently living in England and can’t find a sugar free maple syrup. Could I use honey? I think it’s a more natural sugar.

I have made this recipe twice now and both times they melted into a big flat cookie. Elana help please! What am I doing wrong? I use blanched almond flour, grass fed butter, pure grade B maple syrup, pure vanilla extract, this is getting too expensive to experiment again and again. They taste absolutely delicious, but I would love it if they looked like your picture! Thank you for all of your amazing recipes!

I have been meaning to post this for a while. I had to try this recipe again because they taste so good! This time I did not level the cups of flour and left them heaping. I thought the extra flour would give more body to the batter. I also made it and stuck it in the fridge overnight. The next day I scooped them onto the cookie sheet and baked them, voila! No more flat cookies! Only problem is we gobble them up too fast!! Thanks again Elana!

Could the maple syrup be replaced with raw honey?

Typically I do not use raw honey in recipes that are baked because the heat from the oven negates the benefits of raw. The honey when consumed in a baked cookie is no longer raw. Just one consideration, but I havent tried substituting honey for the maple syrup.
