Gluten Free Chocolate Chip Cookies with Almond Flour

Ingredients
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ½ cup salted butter, room temperature
- 1 tablespoon vanilla extract
- ½ cup maple syrup
- ½ cup chocolate chips
Instructions
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in butter, vanilla, and maple syrup until dough forms
- Remove blade from processor and stir in chocolate chips by hand
- Scoop dough one tablespoon at a time onto two parchment paper lined baking sheets
- Bake at 350°F for 7-10 minutes
- Cool for 15 minutes (do not handle prior or cookies will break)
- Serve

Unfortunately, the gluten free diet was not enough to heal my gut. I took things a step further, eliminating rice, quinoa, potatoes, and corn which helped give me some relief from digestive issues and multiple sclerosis symptoms.
The Grain Free Diet
At that point, I went on a strict grain-free diet.
I became even more committed to this way of life when my son was diagnosed with celiac disease in 2001.
Diet restrictions for a little one are super tough, so I made it my mission to create delicious healthy treats for my 3 year old kiddo –he’s now 24 years old!

Elana, you’ve done it again; these cookies are delicious! I think I made mine a little too big,so they were crispy on the outside but delightfully chewy on the inside. They do spread out as they cook. I left them to cool for the 15 mins and then transferred to a cooling rack, as they were a little moist underneath. I agree with Elana, they don’t last long enough to store LOL!

I have always used the recipe like this but with grape seed oil. This recipe called for 1/2cup less of almond flour than that original recipe, but I added the extra half cup (2.5 cups total) as my batter was very thin. I have always also baked them for a longer time as I prefer a crunchy cookie. Just took them out of the oven and cooled just enough to taste test one with hubby. Yummy. The grape seed oil ones are thicker but these are pretty good.
I find they taste best when completely cool, when they are warm I don’t really lie them but look the heck out once they cool.
I freeze mine and just eat them frozen…they are super crunchy then!

I always use coconut sugar mixed with a little water in your chocolate chip recipes and they turn out perfectly. Switching up the oils works too. I mostly alternate between butter and coconut oil. Thanks for your recipes!

Hi Patricia, my boys and their friends usually gobble the cookies up the same day that I bake them so I rarely get to store them. When I do, I either leave them out on a plate on the counter, or place them in some sort of container that is not sealed (they will become mushy if stored in an air tight container), and put them in my pantry. I don’t own a microwave so not sure if reheating them in one would work. If you try that I hope you’ll stop back by and leave a comment to let us know! :-)

Just wanted to throw out there as a caveat that anyone who is doing a stricter Paleo diet, especially if for health reasons, should probably NOT purchase the chocolate chunks Elana uses/endorses. They contain cane sugar and as such are not only not Paleo, but cane sugar causes inflammatory issues for a lot of people with autoimmune issues. Cane sugar has also been tied to a lot of other health problems.
A lot of chocolate products also contain soy lecithin, which is also not Paleo.
Go Raw sells chocolate squares made from cacao and agave, but they are pretty expensive. There are recipes out there on how to make your own chocolate sweetened with honey or other alternatives, it takes a little digging but may be worth it.
Ultimately, do what’s right for you and make sure you go forth with an informed opinion :-)
