Gluten Free Chocolate Chip Cookies with Almond Flour

Ingredients
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ½ cup salted butter, room temperature
- 1 tablespoon vanilla extract
- ½ cup maple syrup
- ½ cup chocolate chips
Instructions
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in butter, vanilla, and maple syrup until dough forms
- Remove blade from processor and stir in chocolate chips by hand
- Scoop dough one tablespoon at a time onto two parchment paper lined baking sheets
- Bake at 350°F for 7-10 minutes
- Cool for 15 minutes (do not handle prior or cookies will break)
- Serve

I began focusing on gluten free recipes in the 1990s.
Unfortunately, the gluten free diet was not enough to heal my gut. I took things a step further, eliminating rice, quinoa, potatoes, and corn which helped give me some relief from digestive issues and multiple sclerosis symptoms.
The Grain Free Diet
At that point, I went on a strict grain-free diet.
I became even more committed to this way of life when my son was diagnosed with celiac disease in 2001.
Diet restrictions for a little one are super tough, so I made it my mission to create delicious healthy treats for my 3 year old kiddo –he’s now 24 years old!
My easy recipes for dessert were created for him, and they are all gluten-free, grain-free, and lower carb.

Decades ago, before it was called the paleo diet, we simply referred to the way we eat as grain free and healthy.
Keto Diet and Intermittent Fasting
My eating plan has continued to evolve over the years. Paleo friendly potatoes and rice make me incredibly ill, and I thrive with a higher level of healthy fat, so I moved over to the keto diet.

I call myself Paleo-friendly (I avoid the word diet :-). After trial and error, I’ve found that for bread – which I did miss during my initial Paleo phase, my best best is anything made with Sourdough culture. My body loves it and I do too. Pretty much everything else is Paleo-centric. Will someone please report back after they make these as I know Elana doesn’t answer these posts anymore. I would like to know if these are chewy, soft and crumbly or crispy. Everyone likes their cookies a certain way-me included! I just hate to waste expensive ingredients if these cookies don’t fit the profile I’m looking for. My family prefers crispy/chewy over soft/crumbly. Thanks in advance for the feedback!

I made these today. I had just over a cup of almond flour, so I halved the recipe, but then tweaked the amounts of butter and baking soda up a bit. Also, I use Bob’s Red Mill which Elana does not endorse in her recipes. That said, these are so delicious. I could have finished off the batter raw. I cooked mine the full 10 minutes so the bottom was nice and brown – crispy enough for me. Mine were thin, probably because I wasn’t exact in my measurements but the thinness made them a little crispier too. I think the recipe is a winner.

I made them today and cooked them til they were a little browner than Elanas picture showed. I would add more like 3/4 c chocolate chips. Use a one TBS ice cream scooper. Covered the bottom of a glas s with wet paper towel to press round scoops flat. Lightly as she suggested. I am hoping that they will stay as crispy as they are today. I have stored them in an airtight container. They are crispy and Delish. And do as she says, cool them 15 mins on baking sheet then m15 on a rack. They are the best I have ,add. BUT if you are a Cheney cookie fan then these are not for you.

Thank you for the post about grass fed butter and the video! I am addicted to the stuff. Wish I could find it raw, but at least our co-op carries grass fed butter. It is so amazingly tasty that i can eat it right off the knife. In fact, i actually CRAVE the stuff. Must need some of the nutrition that is in it.

I notice that many paleo “grain free” recipes call of tapioca flour. What is your view of using tapioca flour in addition to coconut or almond flour?

Hi Joyce, as I mentioned above I view the Paleo diet as a flexible template that is perfect for customization. Personally, I don’t eat tapioca starch or flour as it is something I don’t digest well. :-)
