Are you craving an easy peanut butter ice cream recipe? Well I have something even better for you! A dairy-free Sunbutter Ice Cream made with only 6 ingredients. This naturally sweetened ice cream recipe contains coconut milk, sunflower seed butter, dates, vanilla, salt, and water!
I often use sunflower seed butter in place of peanut butter in my recipes. Why? Peanuts are not the healthiest of foods since they can contain high levels of mold. Sunbutter on the other hand, is made from sunflower seeds, is more nutritious than peanut butter, and is also great for those avoiding peanuts due to allergies. Finally, peanuts are not considered paleo because they are a legume, not a nut.
Sunbutter Ice Cream
Ingredients
- 1 cup full fat coconut milk
- 1 cup water
- 1 tablespoon vanilla extract
- 8 dates (remove pits)
- ¼ teaspoon celtic sea salt
- 6 tablespoons sunbutter, or sunflower seed butter
Instructions
- Blend all ingredients in a vitamix
- Pour into ice cream maker and process according to instructions
- Serve

I am in the process of making this wonderful Sunbutter ice cream (with no ice cream maker, it is an even more delightful process, as I get to lick the spatula every 30 minutes or so, as I am mixing up the ice cream to be!). Elana, I’ve been reading your posts for the past two years and have enjoyed some of your recipes a lot. I’m new to strictly cooking GF food. With a mild gluten intolerance and being on a 3 month cleanse my diet is all vegetables, fruits and GF grains. For the past 2 months my breakfast consisted of boiled quinoa, squeezed banana and some hemp milk. Through Kelly’s blog I feel encouraged to try other GF grains and some of her recipes. I follow the blood type diet and coconut is an AVOID: because it Enhances the effects of other food toxins. Flocculates serum or precipitates serum proteins.
I love coconut but it is not considered to be good for any blood type.
