No Potato Salad

This healthier gluten free potato salad is perfect for picnics and barbecues.  Replacing potato with cauliflower is a trick that I learned from the “low-carbers.”  And it is a good one!

In the winter, I often make mashed cauliflower in place of mashed potatoes.  Now, in spring, it is wonderful to have this no potato salad made from cauliflower.  We’ll be having it tonight with grilled turkey burgers and green salad from our garden.

No Potato Salad

  • Chop cauliflower into small florets (½ inch)
  • Steam cauliflower on the stove until fork-tender, not more or a stronger "cauliflower" smell develops
  • Allow cauliflower to cool then place in a large bowl
  • Add celery, onion, parsley and egg
  • Stir in mayonnaise, mustard and salt
  • Serve

  4. This was divine, Elana! Every single member of our family, including in-laws, loved it. My husband, who prefers his cauliflower raw (ick) had several helpings, the three year old was enthused because of the egg salad flavor, and the seven year old wanted multiple helpings. We practically licked the plate. Love it, especially since I’m eating low-carb this year. Thank you! I did simplify with no onion (pregnancy heartburn), no parsley, and no celery (hate the stuff). I meant to dice green pepper instead for the crispy green crunch but forgot. Lovely recipe! I used Sir Kensington mayonnaise since we love the flavor and are not strictly paleo. Yum yum.

  6. I made this last night but used a few favorite ingredients from my potato salad (like a bit of dill pickle brine), and it was just amazing! I was expecting my husband to be not so enthusiastic, but he does like cauliflower and he loved it! Thanks for the great recipe!
