Keto Mojito Popsicles

I've been whipping up my sugar-free Keto Mojito Popsicles for the boys all summer. This 4-ingredient popsicle recipe is a breeze to make. All you need is lime juice, mint leaves, stevia, and water. If you're not a fan of stevia this Mojito Popsicle recipe will likely work with a tablespoon or two of maple syrup or honey.

Sugar-Free Popsicle Recipe

Keto Popsicle Recipe Sweetened with Stevia

I use stevia to sweeten my keto dessert recipes. Sometimes though stevia doesn't taste quite right in a recipe. That's not the case here. My testers, the boys and their friends, ate batch after batch of these sugar-free popsicles and had no idea they were eating a keto snack. In fact, when I took the photo above, they kept asking if I was done yet so that they could have more Mojito Popsicles.

Keto Mojito Popsicles

Ingredients
Serves:
8popsicles
Print Recipe
  • 2 cups water
  • ½ cup lime juice
  • ¼ teaspoon stevia
  • 20 mint leaves, cut into ribbons
Instructions
  1. In a one quart mason jar stir together water, lime juice, and stevia
  2. Pour mixture into popsicle molds
  3. Add mint ribbons to each popsicle
  4. Set timer for 30 minutes
  5. Place popsicle sticks into semi-frozen popsicles
  6. Freeze for 3 hours
  7. Serve

Keto Mojito Popsicles Recipe Spiked with Rum

Some of you may be wondering about adding rum to this sugar-free Mojito Popsicle recipe. That sounds mighty good to me. However, I haven't had a drink for more than a decade, since part of my treatment for multiple sclerosis is focusing on nutrient-dense foods. Because of this, I'm not sure how much to add to the recipe, and also unsure if it would freeze well.   1. Mojitos sound like a great, cold treat but I can’t have lime or any citrus- would pineapple or cranberry juice be good substitutes?

  2. Has anyone tried this with a very clean and authentic tequila (which is keto, according to Robb Wolf) instead of rum?

  3. I added 3/4 cup of Rum and used 1/4 peppermint extract to replace the mint leaves since I didn’t have any on hand. I also just added two packets of stevia extract. It is yummy in a glass, I can’t wait to try them frozen! Thank you!

      • How do you store these popsicles? Just made my first batch. And how do you get the mint to disperse through the mixture? Mine all floated to the top, now the bottom. But they are delicious! Thanks for all your great recipes!
