This easy grain-free casserole recipe makes a wonderful dinner but is also good for so many other occasions. It’s the perfect one-pot potluck meal, given that it’s chock full of protein and vegetables, easy to make, and delicious.
Keto Mac and Cheese Skillet Casserole has a bit of a kick to it! If you are making this healthy dinner recipe for children, you may want to reduce the smoked paprika.
To make this keto casserole recipe even easier, I cook the spaghetti squash the night before. That way I simply brown the meat, toss the ingredients in a bowl, and throw it in the oven for a wonderful grain-free dinner.

This is DELICIOUS. Added Garlic(TBLS) and dry mustard (maybe a tsp?) And we topped with broccoli. The Broccoli crisps up for a really nice texture. We were craving tater tot hotdish, and this was a fantastic Keto substitute.

I’ve made this recipe 3 times now in the last 6 weeks It’s amazing and versatile. I always start with the base recipe, but I’ve used both ground beef and ground pork (with COVID-19, my meat selection is a bit spotty) and added onion/garlic/peppers, etc. No matter if I’m sticking with the recipe as is, or using different meat or adding veggies, it’s a hit in my house! Thank you for the recipe. It is amazing.

I have frozen half and reheated it and it was delicious. I have also added sautéed mushrooms cook until all the water is absorbed and eliminated the beef and loved it!

Hi Elana, I am making this tonight, can I bake then portion out half the recipe into freezer containers? When unthawed will it heat up in the microwave ok?
