This easy grain-free casserole recipe makes a wonderful dinner but is also good for so many other occasions. It’s the perfect one-pot potluck meal, given that it’s chock full of protein and vegetables, easy to make, and delicious.

Keto Mac and Cheese Skillet Casserole has a bit of a kick to it! If you are making this healthy dinner recipe for children, you may want to reduce the smoked paprika.
Keto Mac and Cheese Skillet Casserole
Ingredients
- 1 pound organic grass fed ground beef
- 4 cups cooked spaghetti squash noodles
- ½ cup heavy cream
- 4 large eggs
- 1 tablespoon smoked paprika
- 1 teaspoon celtic sea salt
- 1 teaspoon ground black pepper
- ½ cup freshly grated parmesan cheese
- 2 cups freshly grated cheddar cheese
Instructions
- In a 10 inch cast iron skillet, cook beef until brown
- Remove from heat and set aside
- In a large bowl, Whisk heavy cream and eggs until smooth
- Mix in smoked paprika, salt, and pepper
- Stir in spaghetti squash, parmesan, and 1 cup cheddar
- Stir in ground beef
- Transfer mixture back to cast iron skillet
- Top with remaining cup of cheddar
- Bake at 350°F until bubbling around the edges 40-50 minutes
- Cool 15 minutes
- Serve
Quick and Easy Keto Dinner Recipe
To make this keto casserole recipe even easier, I cook the spaghetti squash the night before. That way I simply brown the meat, toss the ingredients in a bowl, and throw it in the oven for a wonderful grain-free dinner.

Hi Elana, I made this and we thought it was awesome. I also love how easy it is to prepare. Would you answer a question for me, though? How does your family eat this? Just on a plate with a fork? Do you put anything on top? I had a chopped tomato on top of my leftovers and it was yummy. Sorry if these are odd questions.

I’m scouring the supermarkets and health food stores and I’m finding more and more products made with almonds, grain free, and made with veggies. I’ve found pasta made with mostly chickpeas, black beans, and edamame, from a company called Explore Cuisine. The products have a little rice or tapioca flour.

It looks delicious! There will be a time down the road that I will make this. I have enjoyed many of Eleana’s recipes over the year’s. I’ve even “tweaked” several Paleo recipes into allowable Keto recipes. With that said, spagetti squash is a higher carb veggie and not recommended for the Keto lifestyle if you are trying to lose weight or have major health issues. It is recommended, though, for carb-up days or maintenance. Thank you for all the time you spend in helping us all to make wise health choices and sharing your health journey with us ❤️

Ellen, thanks so much for your comment! The spaghetti squash in this recipe contains 4g carbs per serving, a very reasonable amount for someone following a strict Keto Diet and looking to keep carbs under 20 grams per day :-)

I will try this Paleo and report back. Will probably use heavy coconut cream, nondairy mozzarella cheese and nondairy Parmesan cheese. My system doesn’t deal with dairy very well. Especially heavy cream.
