Egg-Free Keto Crackers
Ingredients
- ½ cup blanched almond flour (not almond meal)
- ½ cup macadamia nuts
- 1 tablespoon coconut flour
- ¼ cup pumpkin seeds
- 2 tablespoons sunflower seeds
- 2 tablespoons raw sesame seeds
- 2 tablespoons hemp seeds
- 1 tablespoon golden flaxmeal
- ½ teaspoon celtic sea salt
- 1 tablespoon palm shortening
- ¼ cup water
Instructions
- Pulse almond flour, macadamias, and coconut flour in a food processor until well ground
- Pulse in seeds, flaxmeal, and salt until almost fully ground (leave a little texture for crunch)
- Pulse in shortening, then water until dough forms
- Separate dough into two halves
- Place each half of dough between two pieces of parchment paper
- Roll out dough to ⅛-inch thick, then remove top piece of parchment paper
- Transfer bottom piece of parchment paper with rolled out dough onto baking sheet
- Cut into 2-inch squares using a pizza cutter or a knife
- Bake at 300°F for 20 to 25 minutes (or dehydrate, haven’t tried so you will need to experiment)
- Serve

I made hemp butter last night, it is terrific! I carefully baked a big bag of hemp hearts at 400`F for 6-8 mins, stirred them and baked 5-7 mins more & I let each batch sit on the parchment lined baking sheet about 10 mins before removing and pouring into the food processor.
I added 2 dashes of vanilla extract, 1 tsp sea salt, and 2 dashes of cinnamon, turned on the food processor and set one timer for 5 minutes and the second timer at 15 mins (total time it takes to usually do nut.seed butter. After the first 5 mins I scrap the sides. then resume…
The jar is in the fridge and it stays soft, it’s wonderful. I want to make your crackers to eat with my hemp butter. Also, I do sunflower seeds the same way.

Do ever use tofu in your recipes? I would love some recipes, as they are on blood type diet, which I find so good for me. I have read that some eggs and fat can be replaced with tofu. I do love what I have tried of your recipes so far, especially the orange cake. Soooo good. What a nice discovery, so I have ordered your Paleo book and should be receiving it today.

Hello Elana! We’re in lockdown here and my husband and I are doing total isolation as much as possible because he’s high risk. I have ALL the ingredients for your egg-free keto crackers except the macadamia nuts. Are they necessary for the fat content? I don’t have any other type of whole nut other than almonds (I do have all the other seeds you call for.). If I swap in almonds for the macadamias, should I up the added shortening a bit? I just don’t want to waste ingredients because we are trying not to go out at all and just live off what we have in the house! I realize this will be on the fly, but you know a lot more about food science than I do…

Jean, thanks for reaching out from lockdown. We’re hunkering down under state order here in CO as well. I’m not sure if the almonds will work in place of the macadamia nuts. I worry about the skins from the almonds impacting the mixture formation as well as the texture of the final product. It would definitely be an experiment and one that very possibly would not work. Let me know what you decide to do! Stay safe :-)

PLEASE replace the palm shortening with something ecologically sound. Palm oil plantations in Borneo and Sumatra are expanding at an explosive rate and destroying habitats that cannot be replaced, driving species to extinction. Orangutans are dying of starvation and poaching (made easier by habitat destruction), and the species is in severe decline. The results are horrific. Check Youtube for documentaries.
