One of my favorite readers, Courtney, requested this brownie recipe in a comment last week.
Here is what she said, “Can we have another VOTE?? Every post I am hopeful that I might open it up to find your recipe for scrumptious dark chocolate brownies… I am NEVER disappointed by your posts, but I am still hopeful that I may experience this recipe in the future…”
Now that is just too cute. How could I say no to this sweet request? Courtney lives in Tennessee and I was fortunate enough to meet her at one of my cooking classes here in Boulder, Colorado. She has a great website with all kinds of interesting natural products on it.
Furthermore, this is my older son’s favorite treat. Whenever I ask him what he would like me to bake for him, he says, “brownies.” He loves packing these higher-protein treats in his lunch for dessert.
So, there you have it, everyone! Brownies.
Brownies
Ingredients
- 1 16 ounce jar creamy roasted almond butter
- 2 large eggs
- 1¼ cups honey
- 1 tablespoon vanilla extract
- ½ cup cacao powder
- ½ teaspoon celtic sea salt
- 1 teaspoon baking soda
- 1 cup chocolate chips
Instructions
- In a large bowl, blend almond butter until smooth with a hand blender
- Blend in eggs, then blend in honey and vanilla
- Blend in cacao, salt and baking soda, then fold in chocolate chips
- Grease a 9 x 13 inch baking dish
- Pour batter into dish
- Bake at 325°F for 25-40 minutes

I recently discovered a fun website called Flavorista.com. Low and behold, I checked it out this morning and saw a fantastic write up on gluten-free by the site’s author, Barr. What I liked best about her take on this timely topic, is that she is one of the few mainstream chefs to offer an “outsider’s” perspective on the world of gluten-free. Made these today with following modifications and they are amazing!!
I used 1.5 x all ingredients except honey which I was low on (so I used 1/2 cup honey and 1/2 cup coconut nectar). Baked 35 minutes at 325 deg in a lined/sprayed 9×13″ Pyrex pan. My boys (ages 13, 6, and 2) LOVE them. Will be making these again next week with natural peanut butter in place of the almond butter.

These are my favorite GF brownies. I made them tonight for a Christmas Eve celebration and I substituted vanilla extract for peppermint extract for a more holiday flare. Yum!

I don’t think I can ever make these again. They’ve only been out of the oven for a few hours and I’ve eaten half the pan. They are so amazing. My picky boys love them too. I haven’t had a brownie since going paleo a couple of years ago. So good!

A bit late on the reply, but if other have the question, I have a hand mixer but decided to use my stand mixer and it blended everything perfectly. They are in the oven now, smelling amazing, and I can’t wait to get noshing on them!

Making these again today. They always come out perfect! I make a few substitutions to include Wax Orchards Fruit Sweet + Stevia glycerite for the honey, a couple packets of instant coffee granules, a combo of chocolate chips & chunks. I like to eat them straight out of the freezer, they remind me of $tarbucks espresso brownies without all the nasty ingredients. Thank you for such a simple, wonderful recipe!

Hi Renuka, Wax Orchards Fruit Sweet is similar in consistency to honey, so I used 1/3 c. fruit sweet and 5 drops of stevia glycerite. They turned out fantastic but I can’t help myself and always have to make adjustments so tonight I used 75 grams (1/3 cup) Wax Orchards Oh Fudge in place of the honey & cocoa powder.

This review is a long time coming as I have made this at least six times now. They are my go to brownie recipe. I do cut the honey to 3/4 of a cup and add about 10 drops of stevia glycerite. I’d love to reduce it more but this is basically the liquid for the entire recipe. I bake them for 30 minutes. My non grain-free family and friends love these as much as I do! When brownies are requested, this is the recipe they want! Thank you Elana. I love your website and simple recipes; they never disappoint me!
