The perfect breakfast beverage, Paleo Chai Latte, made with warming Ayurvedic spices will keep you cozy during the cold weather. Made with eggs, coconut oil, and antioxidant rich chai spices including cinnamon, cardamom, and cloves, this rich hot drink makes a great on-the-go breakfast. Sometimes I serve Paleo Chai Latte as a healthy snack in the afternoon, since it gives me a burst of real energy without any of the caffeine.
Giving Up Coffee and Caffeine
Speaking of caffeine, while many people on the paleo diet start their days off with bulletproof coffee, I do not. I haven’t had coffee since 1993. I think I had a headache for three days straight when I gave up coffee cold turkey a couple of decades ago. My body simply doesn’t tolerate caffeine. The silver lining of giving up coffee is my homemade Dandelion Root Coffee, my favorite coffee substitute beverage. In the winter I drink it almost every day, and a couple of times per week in the summer.
Caffeine-Free Dandelion Root Coffee
Fans rave about my Dandelion Root Coffee. Like regular coffee, its primary flavor is bitter, a flavor that is highly underrated in our culture and very important in Ayurveda and Chinese Medicine. Finally, my homemade Dandelion Root Coffee is a great liver cleanser. For me, giving up caffeine and getting healthy liver cleansing dandelion root into my body every day is a win-win!
Paleo Chai Latte for Breakfast
This Paleo Chai Latte is another great hot drink that’s similar to chai tea, or a chai latte! It’s packed with protein from eggs, and full of fabulous fat from coconut oil. If you are raw egg-phobic, the great thing about this paleo drink is that the boiling water poaches the eggs a bit. If you’re looking for a quick and easy, healthy breakfast recipe this is it!
Paleo Chai Latte
Ingredients
- 2 large eggs
- ½ cup boiling water
- 1 tablespoon coconut oil
- 2 teaspoons ground cinnamon
- ½ teaspoon ground cardamom
- ⅛ teaspoon ground cloves
- 1 date (remove pit) or ⅛ teaspoon stevia
Instructions
- In a vitamix, combine eggs, water, coconut oil, cinnamon, cardamom, cloves, and date
- Blend on high until mixture is frothy
- Serve
Equipment
Another benefit of this paleo breakfast drink? No pan to wash after breakfast. Just rinse out the container of your blender or throw it in the dishwasher, and you’re set! Feel free to customize Paleo Chai Latte to your liking with more eggs or coconut oil. To make this a Keto Diet recipe, omit the date and use stevia. Paleo Chai Latte is my new favorite healthy breakfast recipe.

I’ve made this twice and really enjoy the flavors. The second time I made it I used only one egg and added a tablespoon of collagen because the texture of the two eggs was a bit much for me, even though I love eggs. Both times I made this, the spices were very gritty. I doing something wrong?

Awesome recipe! Thank you Elana. I’m a serious tea drinker and I especially love Chai. However, I’ve been avoiding Chai simply because of all the dairy and sugar. I’ve made this twice now. The first time I used 2 eggs and then tried it with only one egg the second time. Pretty hard to tell the difference. (The second time I used black tea in place of the water too) This is truly delicious. I feel like I have my Chai back!

Hey I know this is an old thread so people may not see this, but if you, IMPORTANT!:…
I started making this every morning and LOVE it, but I did a little research and found out that much cinnamon is actually dangerous for you, if it’s of the most common China-area-origin cinnamon, sometimes called “Saigon Cinnamon” but usually just called cinnamon. There are actually two major types of cinnamon, Saigon and Ceylon, but Saigon is by far the most common (and cheapest) so any unspecified cinnamons are always Saigon. I learned over 1 and 1/4 tsp per day is dangerous, so I reduced the cinnamon to 1 tsp. and upped the other spices to make up for the taste, and it’s still great. An alternative would be to order Ceylon Cinnamon and then you could use the full 2 tsp.

This sounds delicious, and I will definitely try it soon. I’ve always needed coffee in the morning, though, and this sounds perfect if my appetite just isn’t up to par for mid morning to lunch. This winter I’ve actually been poaching eggs in bone broth for breakfast or lunch if I don’t have much else in the fridge – eggs make everything better!

I just made this with the adjustments of using a half scoop of vanilla protein powder in place of eggs, raw honey in place of date/stevia, added a 1/4t vanilla extract and a tiny sprinkle of freshly grated nutmeg. It’s so good! This is a great, and easily adaptable it seems to me, drink recipe for cold damp spring days.

I was a little concerned about raw eggs. I see they cook with the hot water Chai latte I would add some vanilla extract ! Like your version with frozen bananna also maybe some protein from great lakes unflavored gelatin it’s pure collagen for bone health.
