This easy grain-free casserole recipe makes a wonderful dinner but is also good for so many other occasions. It’s the perfect one-pot potluck meal, given that it’s chock full of protein and vegetables, easy to make, and delicious.

Keto Mac and Cheese Skillet Casserole has a bit of a kick to it! If you are making this healthy dinner recipe for children, you may want to reduce the smoked paprika.
Keto Mac and Cheese Skillet Casserole
Ingredients
- 1 pound organic grass fed ground beef
- 4 cups cooked spaghetti squash noodles
- ½ cup heavy cream
- 4 large eggs
- 1 tablespoon smoked paprika
- 1 teaspoon celtic sea salt
- 1 teaspoon ground black pepper
- ½ cup freshly grated parmesan cheese
- 2 cups freshly grated cheddar cheese
Instructions
- In a 10 inch cast iron skillet, cook beef until brown
- Remove from heat and set aside
- In a large bowl, Whisk heavy cream and eggs until smooth
- Mix in smoked paprika, salt, and pepper
- Stir in spaghetti squash, parmesan, and 1 cup cheddar
- Stir in ground beef
- Transfer mixture back to cast iron skillet
- Top with remaining cup of cheddar
- Bake at 350°F until bubbling around the edges 40-50 minutes
- Cool 15 minutes
- Serve
Quick and Easy Keto Dinner Recipe
To make this keto casserole recipe even easier, I cook the spaghetti squash the night before. That way I simply brown the meat, toss the ingredients in a bowl, and throw it in the oven for a wonderful grain-free dinner.

While I have been making your desserts for years, this is the first dinner I’ve made. It was excellent. I miss Mac and cheese and it scratched that itchaikovsky. Even my 14 year old and 5 year olds liked it. Great job!

My son and I love spaghetti squash and always want new ways to eat it. My girls are less exhuberant. Adding cheese and cream might just be the solution! I already use smoked paprika in everything so they are used to that. Must try this soon!

This recipe sounds great, and I have enjoyed others from your Paleo cookbook. I’m wondering how something that includes this much cheese can be considered anti-inflammatory since dairy products and gluten are regarded as two major substances that drive inflammation.

Thanks for your comment Tanya! I have absolutely no issue with organic fermented dairy when I am not eating sugar (including most fruit). I find that sugar is far more inflammatory than fat and protein, but we are all biochemical individuals and need to do what’s best for our own bodies :-)

So much conflicting info out there re foods these days, much of my reading talks about how dairy is an inflammatory food & should be avoided. Others seem to do fine on grass-fed dairy or dairy other than cow. How does one even know where to begin or end ?! Will put this on my list to try, then see if I feel gassy afterwards.
