Even though summer is coming to a close, I’m still into my green juices and smoothies; more than ever, in fact. This is one of my favorites and I owe credit to Meghan Telpner as it is based on one of the recipes from the Green Cleanse on her site.
I’m running out to the airport with one of these in hand to refresh and revive me on the dash to Denver. Soon I’ll be in NYC doing signings and I hope to see some of you there, while I’m in my green smoothie withdrawal.
Greeña Colada
Ingredients
- 1 large cucumber, skin on
- ¼ cup water
- ½ cup parsley, chopped
- ½ cup frozen pineapple chunks
- 1 tablespoon coconut oil
- 5 drops stevia
- 4 ice cubes
Instructions
- Place cucumber and water in a vitamix and process on high until liquid
- Add parsley, pineapple, coconut oil, stevia, and ice and blend until smooth
- Serve
Equipment
This refreshing green smoothie is a great post workout drink. It is hydrating, full of good greenness and a nice little dose of fat. I like to think of it as a green Piña Colada, or a “Greeña Colada.” I feel so healthy drinking it!

Hi Elana,
Just found your site and can’t wait to try out some recipes. I was told by a nutritionist to always eat fruit alone…that mixing it with rice milk for smoothies causes gas. I had also heard for a long time that mixing fruit and veggies will cause a fermentation process in your stomach. Would like to know what you think about this.

I am actually posting a comment about Carrot Cake and Coconut Frosting – for some reason I can’t actually post a comment on the relevant pages :( I tried the Carrot Cake recipe, but as I am not a celiac – just trying to reduce my gluten and simple carbohydrate consumption – I used wholemeal spelt flour. Unfortunately it didn’t turn out so well and did not cook through. Next time I will try almond meal as I cannot find anyone that stocks blanched almond flour where I live.
Regarding the coconut frosting, I followed that recipe to a T and it obviously wasn’t my night for baking because the frosting never set and had little lumps of agave nectar through it… Disaster all round!! ;) Anyway, I’ll have another go and let you know the results. Thanks for the great recipe ideas though :)
