Even though summer is coming to a close, I’m still into my green juices and smoothies; more than ever, in fact. This is one of my favorites and I owe credit to Meghan Telpner as it is based on one of the recipes from the Green Cleanse on her site.
I’m running out to the airport with one of these in hand to refresh and revive me on the dash to Denver. Soon I’ll be in NYC doing signings and I hope to see some of you there, while I’m in my green smoothie withdrawal.
Greeña Colada
Ingredients
- 1 large cucumber, skin on
- ¼ cup water
- ½ cup parsley, chopped
- ½ cup frozen pineapple chunks
- 1 tablespoon coconut oil
- 5 drops stevia
- 4 ice cubes
Instructions
- Place cucumber and water in a vitamix and process on high until liquid
- Add parsley, pineapple, coconut oil, stevia, and ice and blend until smooth
- Serve
Equipment
This refreshing green smoothie is a great post workout drink. It is hydrating, full of good greenness and a nice little dose of fat. I like to think of it as a green Piña Colada, or a “Greeña Colada.” I feel so healthy drinking it!

One of my faves too! So happy you like it. I am currently in Winnipeg (a small city in the Praries of Canada visiting some family and I took my grandma for lunch. I ordered a green smoothie from the veggie place. She tried it and told me it tasted like grass. I told her that was why I loved it. She shook her head at me and said what she always says “What will I do with you…”

Juiced cucumbers are one of the most refreshing drinks – I don’t have a vita-mix so I use my juicer and it works beautifully.

I love green drinks! This one sounds really refreshing though I can’t handle coconut oil unless it is cooked. I’m sure it would be just as tasty without it, though.

When you make this drink in the vita mix, are you just blending it? Or do you use another setting that I wouldn’t have on my regular blender?
