Have you seen Hallie Klecker’s new book The Pure Kitchen?
This cookbook is a lovely collection of healthy gluten free, dairy free recipes. I absolutely love the “Energizing Breakfasts” section which contains quick and easy smoothie recipes full of superfoods; the book also contains wonderful recipes such as Spring Pesto Drizzle, which is packed with healthy greens.
I had the pleasure of meeting Hallie at a conference last year, and can assure you she is every bit as lovely in person as she is on her blog, Daily Bites.
The smoothie below is a slight adaptation of the recipe in Hallie’s book for a Pure Power Smoothie. Hallie and I both like to make smoothies with protein powder in order to start the day off with a nice energy boost. This quick and healthy smoothie is great for breakfast and also makes a delicious afternoon snack.
Breakfast Power Smoothie
Ingredients
- 1 cup frozen strawberries
- ½ cup kevita sparkling probiotic drink, coconut flavor
- 1 tablespoon creamy roasted almond butter
- 5 drops vanilla stevia
- 1 scoop egg white protein powder
- 1 tablespoon ground chia seeds
- 3 ice cubes
Instructions
- Combine strawberries, coconut water, almond butter and stevia in a vitamix and blend on high
- Blend in protein powder and ground chia seeds, then blend in ice cubes until smooth
- Serve

This smoothie looks amazing. I am a BIG fan of smoothies for breakfast after I get home for yoga. Normally my smoothies involve a banana and almond butter, but I really love this combo of strawberries and almond butter, I cannot wait to try it out. Thanks.

This looks super yummy. My current favorite smoothie recipe for my Vita-Mix is:
cup of raw yogurt (I do some dairy)
handful of spinach
handful of blueberries
scoop of protein powder (I use whey protein)
teaspoon of cinnamon
a few drops of stevia (I like NuNaturals)
handful of ice
This is incredibly yummy and a great way to get in some fresh greens.

Hi Elana!!!! I’m a huge fan of Hallie’s book. Everything I’ve made from it has been a winner. I also love having a smoothie for breakfast. It’s a great way to start the day, after I’ve exercised. I agree that the bitter, strong aftertaste of stevia tends to dissipate when combined with coconut sugar, especially in baking. Thanks for sharing – I’ll definitely give this a whirl, as I’m always looking to add to my smoothie repertoire, plus my Health Coaching clients are always interested in new smoothie recipes.

From one VitaMix lover to another, thanks for a great smoothie recipe! As Jay pointed out, yes, the VitaMix is expensive, but even for a person on a budget, it is such a pleasure to have in the kitchen – I think it is well worth it! Honestly, I use it most of the time to puree ingredients for soup. But my ULTIMATE favorite use for the VitaMix is making ice cream. Okay, enough about that. Great looking smoothie, keep up the great work!

can a vitamix totally replace a blender & food processor? i hate my blender/food processor b/c it is insanely loud. blender is not as bad as the food processor. only use the food processor for hummus. i use my blender a lot for baby food. i know the vitamix can make flours, nut butters, ice cream, & even tahini but i didn’t know if it was too powerful to make baby food & grind seeds without making them into a butter! just curious :)

One thing about protein powders and shakes/smoothies is that you have to put it in at the very end of the blending process. High speed blenders can breakdown the protein molecules defeating the purpose of protein powders in the first place.

Hmm..I don’t see how egg white protein could be further broken down when it’s already dehydrated and powdered. I think that’s a myth. :)
