Gluten Free Chocolate Chip Cookies with Almond Flour

Ingredients
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ½ cup salted butter, room temperature
- 1 tablespoon vanilla extract
- ½ cup maple syrup
- ½ cup chocolate chips
Instructions
- In a food processor, combine almond flour, salt, and baking soda
- Pulse in butter, vanilla, and maple syrup until dough forms
- Remove blade from processor and stir in chocolate chips by hand
- Scoop dough one tablespoon at a time onto two parchment paper lined baking sheets
- Bake at 350°F for 7-10 minutes
- Cool for 15 minutes (do not handle prior or cookies will break)
- Serve

I began focusing on gluten free recipes in the 1990s.
Unfortunately, the gluten free diet was not enough to heal my gut. I took things a step further, eliminating rice, quinoa, potatoes, and corn which helped give me some relief from digestive issues and multiple sclerosis symptoms.
The Grain Free Diet
At that point, I went on a strict grain-free diet.
I became even more committed to this way of life when my son was diagnosed with celiac disease in 2001.
Diet restrictions for a little one are super tough, so I made it my mission to create delicious healthy treats for my 3 year old kiddo –he’s now 24 years old!
My easy recipes for dessert were created for him, and they are all gluten-free, grain-free, and lower carb.

Dear Elana, I’m eating these cookies hot out of the oven right this very minute. YOU are an angel. I used to eat toll house but alas, several health issues stopped that. I believe you’ve created a monster! I did a double recipe, and to save a little money on the almond flour, subbed in a cup of coconut flour. They are excellent. I’ve been gluten free for years due to celiacs, and now we’re paleo, and I have been craving chocolate chip cookies for weeks… These are incredible! I used Bob’s Red Mill Almond Flour because it’s all I can find here, and they still turned out great. Even at almost 10,000 feet above sea level, they didn’t spread like all my other cookies do. Stumbled across your site, and am very glad I did! I have recently gone paleo due to health reasons and was missing my baking but your recipes seem very simple, so simple I tried these before work today. I live in Singapore so getting access to the brands is not always easy and I only had bobs red mill at hand. I know it is not recommended to use this brand to get the results but I had to improvise so I sifted the flour and only used the fine sifted flour and these worked a treat, absolutely delicious! Just thought I would share the tip!

I followed your instructions but the ingredients didn’t come into a dough until I added 2 eggs to it.
Also 1/2 a cup of chocolate chips is too much .
Over all I like it but I am not crazy about it
