Pumpkin Chocolate Chip Cookies
You’ll be astounded at how addictive these nut-free, egg-free cookies are!
Gluten Free Pumpkin Cookies with Chocolate Chips
Ingredients
- ¼ cup coconut flour
- ¼ cup arrowroot powder
- 1 teaspoon pumpkin pie spice
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- ½ cup salted butter, cold, cut into 12 pieces
- ¼ cup canned pumpkin puree
- ¼ cup honey
- ½ cup chocolate chips
Instructions
- In a food processor, combine flours, pumpkin pie spice, salt, and baking soda
- Pulse in butter, pumpkin, and honey until dough forms
- Remove blade from food processor and stir in chocolate chips by hand
- Press balls of dough down firmly
- Bake at 350°F for 10-15 minutes
- Cool for 1 hour on baking sheet (do not handle prior or cookies will break)
- Serve

Hi Elena thanks so much for this! I just started the elimination phase of AIP so i really needed some sort of treat, and no eggs and no nut flours seamed so daunting!!! I used Gee ( as close to AIP as my current pantry could manage) and subbed the chocolate chips for cranberries. they where super tasty!!! You always know you’ve got a winner when you gotta fight Hubby for them ;)

I used coconut sugar and these cookies well didn’t work . I blame me for not wanting to use honey.
I Also flattened the Cookies I’ll use as a crumble instead . (My fault … I love cooking but baking ehh not so much )

I used palm shortening instead of butter and they came out yummy. I cut palm shortening in half and added 1/4 cup more pumpkin puree so wet quantities were same

Just made these cookies — but found them too salty. Should have left out the sea salt as I generally follow a low sodium diet and never add salt to my baking. Next batch will leave out the salt.
