I love a good green smoothie recipe. I’ve been part of the health industry since 1993 and have been whipping up healthy, yet tasty treats like this for just as long! This Keto Mint Chip Smoothie is a classic family favorite that’s perfect for St. Patrick’s day and all year round!
Make this Keto Mint Chip Smoothie on a busy morning for a quick breakfast. With a base of hemp seeds, kale, and protein powder, you can throw it together in a couple of minutes. It’s also a favorite after school snack in our house.
With no added sweeteners that spike your blood sugar this green smoothie will keep you going all morning. Unlike other smoothie recipes that have high-carbohydrate sweeteners such as honey, maple syrup, or fruit juice, this healthy keto smoothie recipe is the perfect low-carb high-fat (LCHF) recipe to start your day.
Keto Mint Chip Smoothie
Ingredients
- 1 ounce kale, chopped
- 1 cup full fat coconut milk
- 2 tablespoons hemp seeds
- ¼ cup egg white protein powder
- ½ teaspoon peppermint extract
- ⅛ teaspoon vanilla stevia
- 1-2 cups ice cubes
- 1 tablespoon chocolate chips
Instructions
- Place kale and coconut milk in a vitamix
- Blend on high speed for 60 seconds, until smooth
- Blend in hemp, egg white protein, peppermint, and stevia for 30 seconds
- Blend in ice
- When shake is thick and smooth, blend in chocolate chips
- Serve

I love using hemp seeds in my smoothies for a number of reasons. First, they’re a fantastic food for the Keto Diet. Second, they’re a great dairy-free, nut-free way to add a smooth texture and rich, creamy flavor to healthy smoothie recipes. Finally, hemp seeds are high in healthy omega-3 fatty acids.
In the summer and fall, I love making this green smoothie with kale that I pick from our garden. This shake is not about hiding vegetables from your children, it’s about being able to eat something quick and hearty for breakfast that has a good dose of protein, fat, and fiber.

Hmmm, you just gave me an idea. Could I sneak kale into homemade icea cream if it was pureed enough? Maybe not. Some things are just meant to be treats.

I just made this and it was delicious! I used unsweetened, raw cacao nibs instead of chocolate. This probably made it slightly less sweet than Elana’s version, however, they did mostly clump and sink to the bottom. Tomorrow I’ll try blending them in sooner, with the ice, and see if grinding them up more helps distribute them more evenly in the drink.
I was also curious what the benefits, both taste and nutrition-wise were to using the hemp seeds. I’ve been using flaxmeal or flax seeds for over a year now, but this is my first venture into hemp seeds.

Doesn’t blending the kale in a smoothy process the fiber out of the kale?

No, you only remove the fiber from vegetables if you juice them which strains out the fiber. Breaking down the fiber in a blender does not remove the fiber and in some ways may make the nutrients in the vegetables easier for your body to absorb. Give it a whirl – pardon the pun! :-)

Thanks Elana for fixing the recipe! Now we are talking about protein :) I calculated rough new values: protein 27 grams, fat 25 grams, net carbs 6.5 grams, and some 380 kcal per serving. It’s now quite much higher in protein, so especially good for those who are physically active.
