vegan pumpkin pie ice cream

Pumpkin Pie Ice Cream

Let us now praise all things pumpkin.  I’m kinda obsessed with gluten free, dairy free pumpkin dishes right now, hence the vegan Pumpkin Ice Cream here, and the Pumpkin Bars earlier this week.  And let us not forget the Pumpkin Pie Muffins of last year either.

This pumpkin pie ice cream is a delicious fall treat whether served at Halloween or Thanksgiving.  For more information on pumpkin mania, check out this funny article from Esquire called Some Pumpkin Flavoring Best Avoided this Halloween.

Hi, I signed up for your email recipes but never got a request authorization in my inbox. It will not let me sign up again.
Thanks! Don’t want to miss any! I’ve been gluten free but found paleo works for my body- finally I lost some weight and have no leg pain!

    Hi Elana,
My family and I have been gluten and dairy free for over 6 years now, since the birth of our first son. Your website has been so helpful especially when mainstream resources were not always available/reliable. Plus, I prefer to do more from scratch, so I love the recipes! I have a substitute question. We cannot eat cashews, Brazil nuts or pistachios. Wat could we use in this recipe in place of the cashews?
    Thanks again! ~Stephanie

I’m excited to see that you are obsessed with gluten free AND dairy free pumpkin dishes right now!! :-) I have three more pie pumpkins I need to use soon! Due to my health issues can’t do either gluten or dairy, so I’m always thrilled to find tasty new recipes that work for me without having to have to make changes to it! :-)

  11. Linda says

OK. So this recipe made me high tail it to McGuckins and buy an ice-cream maker today. Not sure it will even make it into the ice-cream maker because I can’t stop eating it by the spoonful!!!

  12. Kim says

When I lived in Italy this summer I promised myself I’d buy an ice cream maker so I could recreate gelato at home. Here is another recipe to inspire me to buy one! :) Thank you!

  13. Lisa Vance says

This looks delish! It’s on my list for Thanksgiving deserts.. I’m terrible with gluten-free baked goods, so this is pumpkin without baking, SWEET!

  14. says

Hi Elana! I checked out your recipe a few days ago but haven’t looked at my own comments…when I finally looked at them today I noticed that I you linked to my pumpkin ice cream sandwiches. Thanks so much for sharing my recipe with your readers! :)

I know you can’t eat cornmeal but the pumpkin and cornmeal cookie combo is delicious. I like your version with cashews and coconut milk – that has to create a luscious smoothness.

  15. Tina McEwen says

Just purchased your “Gluten-Free Almond Flour cookbook” and I can’t wait to try these recipes! Looking forward to a healthy Christmas meal this year.

I live off of the recipes on your website since my son and I are both gluten sensitive…and I would love to have a copy of Feeding Baby Green! I’m expecting my third baby (another boy!) in May and would love to have this book as a resource.

    Thanks for all you do!

  19. Jennifer says

I’ll have to try this…looks delish! Made the Pumpkin Pie Muffins this weekend and they are fantastic. I substituted Bob’s Red Mill flour in lieu of the Almond as I didn’t have any and they still came out great.

  20. Chris says

Can’t wait to try this out…will be a first venture into ice cream for my kids (3yrs, 18mos, 3mos). Well…maybe not the little one :)

  21. Mellanie says

    Hi Elana!

I was inspired by your recipes and have tried a couple of them with good results. I saw the healthy ice cream recipes and decided I had to have an ice cream maker! I finally got one and made cinnamon ice cream that was to die for; I love pumpkin, so I can’t wait to try your pumpkin ice cream recipe!

    Thanks for all you do!

  22. says

I just want to thank you again for all your yummy recipes. I look forward to every new recipe you post. As a fellow Celiac, I don’t know what I would do without my favorite cookbook: The Gluten-Free Almond Flour cookbook that you produced. I always make baked goods from there and bring them to any celiac or gluten free events I go to and then people rave. Of course I give them the recipe and tell them to purchase your book! I can’t wait for your next cookbook, I’ll be the first in line.
Thanks again for sharing all your wonderful recipes, it is greatly appreciated!

I’m writing this as I’m enjoying my peach blueberry crumble and a cup of tea! Yummy!

    Happy Halloween!

  24. Bett says

    Looks amazing!

I am wondering how many servings this is, of what size scoop. It helps the decision (make it? don’t make it?) and if that answer is yes, the planning process, to know.

  25. Cindy says

Well its time to find a ice cream maker, My son and I have a hankering for some pumpkin ice cream YUM thank you so much…Cindy from Western Kansas…

  26. Andrea says

This looks so amazing! I love all things pumpkin around this time of year and I have two beautiful squash that I could roast to make this. YUM!

  27. says

I love that you used raw cashews and coconut milk. I haven’t yet used cashews for a vegan ice cream, but I’ve made cashew milk and cashew cream, so I had an inkling it’d work. This looks delightful.

  28. Ardith says

This ice cream looks delicious! Also, I have just begun the process of starting a family and would love to have the book!

  29. says

This looks so go. Whenever I attempt “ice cream” it’s too icy and freezes solid, so I only get one creamy serving on the first day. I will have to try this one.

  30. Amanda says

I am a mother to a little girl, and I am always trying to read anything about children and health. I would love to win that book. Hope everyone has a safe and Happy Halloween!!

  31. Jessica says

This just may be the recipe that finally causes me to break down and buy an ice cream maker! I’m so excited to try it – yum!

  32. Heather says

Oh, this looks yummy :) Loved the pumpkin bars! Thanks for all the great ideas for using fresh garden pumpkin! We’re expecting our fourth baby & I’d really like to do much of the baby food making myself this round, so the book sounds awesome, too!

  33. Melissa says

This looks so good, finally a recipe for ice cream that is egg, dairy, and soy free. I’m so excited! I love pumpkin too.

  34. Christie says

I’m glad you’re obsessed with pumpkin things, because I am too and now I have some great recipes to try! I’m going to try the pie soon and I’m SOOOO excited!!! I also have a 2-year-old and am expecting a new baby, so I’d love the book.

  35. says

Yum! This looks great!! I wonder if I could sub the coconut milk for almond milk. I’m intolerant to coconut. :( Would I need to add something to make it smoother then too…like banana?

  36. Hannah says

I’d love to win the book! Baby #2 is on the way and I need another babyfood making book!
Thanks for all the great recipes! I am making the food for a friend’s Blessingway and most of what I am making is coming either from your book or this website!

  37. Rebecca says

That looks great! I am trying to find an ice cream maker that’s not made in China, and doesn’t have an aluminum bowl :(

  38. Tamara says

Elana, I’ve been making ice cream with cashews since you published your vegan vanilla recipe. I have found that if I soak the cashews overnight before blending them, the nuts soften and blend better, and this eliminates the grittiness I would otherwise get in the ice cream (mind you, I don’t have a Vitamix, so maybe that would make a difference, too).

  39. sas says

looking forward to making pumpkin yummyness with all your recent recipes. My husband picked up a big pumpkin today at the farmer’s market. I can’t decide what I’ll make this weekend….

  40. says

Great recipe, and that book looks fascinating! Can’t wait for some of both!!

I’m debating between your many delicious desserts for my birthday treat this weekend! Might have to serve whatever I make with some pumpkin ice cream!

  41. colormepink says

Yum! I’ve been enjoying pumpkin smoothies, this sounds right up my alley.

I don’t know if you’ve gotten much feed back yet, but I’ve noticed and appreciate the related links you’ve been doing the last few posts.

  42. says

I am SO excited to try this! We don´t have an ice cream machine, so hopefully I will be able to get the right texture by freezing and stirring. Thanks so much for sharing!

  43. says

You stole this recipe from me, Elena. ;) Don’t worry, I don’t mind. I have been making this pumpkin ice cream recipe (using all coconut milk) for quite a while now. Thank you for letting us see your version.

  44. Rachel says

This looks truly delightful! I look forward to autumn all year long–partially for the pumpkin dishes! Love that there are healthy options to make for my family.
