This Rosemary Lemon Chicken has become my go to dinner dish this summer. In fact, I’ve been making it a couple of times a week and loving it, as has my family –children included. It’s super easy to make, very healthy and fabulously fresh and delicious with hints of garlic, lemon and rosemary complementing the flavor of grilled chicken.
I love to make this gluten free chicken recipe along with some grilled zucchini and other summer squash. Stay tuned, as I’ll be posting my delicious recipe for grilled zucchini next. Quite necessary, I think, as the attack of zucchini is rapidly approaching those of us with backyard gardens!

What an easy and delicious chicken recipe. I love rosemary – one of my favorite herbs – and last winter’s unusually cold snap (okay, cold snap for those of us in Dallas – I know you deal with snow all winter!) killed off our bush. Just now have enough growing again to use. I think a big batch grilling session is in order – I could munch on this chicken all week!

We love rosemary lemon chicken – I make it often, too. It’s so fun to walk outside and cut the rosemary from my bush. All my herbs are doing great but I’m envious of everyone’s zucchini. My novice gardening skills somehow killed off our zucchini plants. I might try again when it cools down – Dallas has a long growing season.
Elana, this post came through before I left work last night, and before I’d planned dinner. I hit the grocery store and made this on my beloved stove-top grill pan, and I’m eating some of the leftovers for lunch right now. This will definitely be a standby for me. THANKS!! I am assuming that one pound of chicken breast means skinless, boneless – yes?
Elana, Since I don’t grill I would like to do this in my oven with breasts or a whole chicken. Do you have any cooking tips to make it taste juicy and not overdone? I’m good at overcooking my chicken to death. Help! :)
I have found that putting a lemon half or most any fruit ( apple, lime, orange…) in a whole chicken is the best, almost impossible to dry it out. May be the moistest chicken you ever ate.
Good tip! I dont know what it is but every now and then I get a dry chicken! Hopefully, with your tip, that will not happen anymore :)

Looks delicious! You could make this with a whole organic chicken too – a more sustainable way of using the bird.
