Ingredients

olive oil

cups
chopped onion
1
cup
finely chopped celery

Granny Smith apples, cored and chopped into 1-inch cubes

cup
finely chopped italian parsley
1
loaf
Paleo Bread
4
large eggs
1
teaspoon
celtic sea salt
1
cup
prunes, halved
2
cups
cooked chestnuts
, prepared
Instructions
Heat olive oil in a
9 inch skillet
over medium heat
Sauté onions until soft, about 15 minutes
Add celery and sauté for 10 more minutes
Add apple and parsley and sauté 5 minutes until apples begin to soften
Transfer mixture to a very large bowl
Bake bread cubes on a
parchment paper
lined baking sheet for 5 to 10 minutes at 350°F
Cool bread cubes for 20 minutes after removing from oven
Stir bread cubes into vegetable mixture
Stir eggs and salt into vegetable mixture
Mix prunes and chestnuts into vegetable mixture
Transfer mixture to a
9 x 13 inch baking dish
Bake stuffing 40 minutes at 350°F, or until cooked through and browned on top
Let rest for 15 minutes
