Ingredients

grapeseed oil

olive oil

large onion,
chopped

pound
shitake mushrooms,
chopped
2
quarts
Chicken Stock
, water, or
Kettle & Fire Bone Broth
½
teaspoon
celtic sea salt
Instructions
Heat oil in a
6 quart stock pot
over medium heat
Add onion and sauté 15 to 20 minutes until caramelized
Add mushrooms and sauté 5 to 10 minutes until tender
Add stock and salt to pot, bring to a boil, and simmer 10 minutes
Transfer to a
vitamix
and carefully purée in small batches until smooth
Serve
