I thought y’all might enjoy some Paleo Mini Bagels for the holidays. Yes, I know this is not exactly a traditional holiday treat. However, as of late I’ve been going lower and lower in my carb consumption. I am truly digging the results I’m getting from ditching fruit and dessert and sticking to fat, protein, and vegetables. A low-carb diet seems to agree with my constitution!
So, what’s a low-carb-a-holic to do during the season of desserts? That’s where my gluten-free mini bagels come into play. Not only are they one of my festive favorites, the boys really dig ’em smothered in cream cheese and lox. I think they’re the perfect after school snack for my growing guys. I’ve also taken these lovely little bagels to my synagogue where they were devoured by numerous Jews, which I think is a great sign when it comes to bagels.
Please note, to make this recipe you will either need 3 mini donut pans, or you will need to bake the bagels in 3 separate batches.
This mini bagel recipe is basically the bagel recipe from my latest book, Paleo Cooking from Elana’s Pantry made into little bagels and smothered in the delightful toppings of poppy seeds, sesame seeds, and onion flakes, it was my boys who asked for an everything bagel –i.e., a bagel with a couple of toppings. I use a mini donut pan to make these and I pipe them into that pan with a pastry bag.
This high protein Paleo Everything Mini Bagels recipe is made with almond flour, coconut flour, and golden flax meal, and contains eggs as well. I haven’t tried testing it with other ingredients –if you do, as always, please leave a comment with the changes you made to the recipe and also advise us as to how it turned out.

I just tried it and they seek to have come out just fine! I haven’t tried them with the golden flax though. The color is a bit closer to a multigrain dough.

Thank you so much for this great recipe! I’ve developed several autoimmune diseases over the past 6 years (Hashis, Celiac & Late Onset Type 1 Dibetes) so I have a lot of food restrictions. It’s been years since I’ve eaten a bagel and have missed them so much. These turned out great and definitely reminded me of my old life :)

W type one, look at the research showing molecular mimicry with dairy, it’s why the islet cells get attacked…. Remove dairy, remove molecular mimicry attack of the pancreas.

I have donut molds made from
Aluminum. I’m worried they will stick even with greasing and flouring. In the past I cut little parchment paper rings to line them. What do you think? Do you recommend a silicone or non stick Pan?

Wow! You nailed the “yeasty” smell and taste of bread with the vinegar! Such a cool trick! Whipped up a quick batch just to test it and subbed in a few items as changes due to allergy/availability. Only had 3 eggs and used just the whites (egg allergy). Added two “chia” eggs for extra support.
Subbed in the shelled hemp seeds which I pulsed for a finer grind as flax doesn’t work for me.
Still turned out with a bit of a rise and nice texture as well as really earthy yeasty flavor!
Will make these for my gf friends!

I don’t like the taste or texture of the flax .can I just leave that out or do I need to substitute something in its place ? Over all it was a great recipe was happy with it.

I just made these in a mini loaf tin since I don’t have any doughnut ones and they are literally amazing. Since going paleo about a year and a half ago I haven’t eaten any bread-like products but these in a mini loaf got the texture spot on. Definitely satisfied my cravings.
I didn’t use flaxmeal, instead I used raw shelled hemp seeds! I’m not sure how it changed it but it definitely turned out great! I also didn’t put anything on top like the poppy seeds, onion flakes, etc. I just left them plain.
My sister and I were discussing how cute it would be to make mini grilled cheese sandwiches with slices from a mini loaf and other things of the like. I’m so excited I found this recipe, I’m very pleased.
