Low-Carb Cornbread

I’ve been serving this Low-Carb Cornbread Recipe at our Thanksgiving dinner for years and it’s quite a hit. We love it smothered in my Paleo Gravy, or dipped in my incredible 3-Ingredient Cranberry Cherry Relish. The boys enjoy it year-round when I melt butter and honey together and drizzle it over the warm cornbread straight out of the oven.

Low-Carb Cornbread Recipe

I loved making cornbread when I was growing up. Back then we used a mix, and smothered the cornbread in margarine, rather than wholesome butter. But that was the 1970’s when everything was low-fat, at least in our house. Now we know better and I make this grain-free, paleo cornbread which is totally corn-free!

Keto Cornbread Recipe

This Low-Carb Keto Cornbread is made with 6 ingredients in total. This recipe is so dang easy it won’t bog you down when you’re cooking your Thanksgiving dinner. I often make it a day ahead of time and remove it from the skillet, wrap it in a paper towel, then zip it into a plastic bag to store in the fridge. It will keep for up to 4 days when stored this way.

Instructions

  • In a food processor combine almond flour, flaxmeal, baking soda, and salt
  • Pulse in apple cider vinegar and eggs
  • Transfer batter to a greased 9 inch cast iron skillet
  • Bake at 350°F for 20-25 minutes
  • Serve

Sweet Keto Cornbread Recipe

If you would like to sweeten this Low-Carb Cornbread Recipe you can add ⅛ teaspoon of stevia. I’ve made it that way and it turns out quite well. I think it would also be amazing with a tablespoon or two of honey added to the recipe, but I haven’t tried that so not sure if other ingredients will need to be adjusted accordingly.

  1. This is my most used recipe from anywhere. It is so easy and versatile. None of the other 4 people in my house are low carb but they love this bread. As I am on maintenance and can eat about 80 carbs without gaining weight ( though mostly I stick with 20 per day). Tonight I wanted beans dammit! Made a soup of small red beans with ham and veggies. This “cornbread” was perfect with it. This time I added a cup of shredded pepper jack. As always, thank you for this awesome recipe.

  3. Hi, I have been using your Gluten-Free Almond Flour cookbook for years; have recommended and given it as a gift to friends. All the recipes are easy and delicious.

    I just went online to find your cornbread recipe and can’t find the corn meal amounts listed in the ingredients listing. Did I miss something? I have the flax seed to make the golden flax seed meal and am ready to start baking… just need to know the amount of corn meal needed.

    Also, is almond flour almond meal ground more finely?

    • Paula, thanks for your comment! And thanks also for recommending my books and giving them as gifts for years! I have not eaten corn in any form since 2001, and there is no cornmeal in my cornbread recipe. LMK if you have any other questions :-)

  7. This is a very nice healthy alternative to cornbread! I recommend it to several people that are trying to lose weight or are diabetic.

  8. Deceitful to call this cornbread. It isn’t yellow like the photo and has the same ingredients as many normal keto breads. Nothing cornbread-like about it at all. I’m from the south and have many delicious cornbread recipes and many keto recipes. So far, there is nothing close to keto cornbread including this recipe.

      • This is my favorite keto corn bread recipe.
        I am also from the south, It is a little different, everything keto is different. but we like it anyway as a healthy alternative and it is easy to make.
        P.S. Flax does come in two colors. One is darker It is the most available, than the other, golden flax is yellow or golden and They seem to taste abt the same.
