Low-carb almond flour produces the perfect crumb in this easy muffin recipe. Lightly sweetened with stevia, raspberries and lemon zest then round out the flavors of this incredible low-carb muffin. I like 'em sliced in half, toasted and smothered in butter. They're good for breakfast or dessert and amazing with a cup of Dandelion Coffee, or my Ketoccino.

Keto Raspberry Lemonade Muffins

Print Recipe
  1. In a food processor, pulse almond flour, baking soda, and salt
  2. Pulse in eggs, oil, lemon zest, and stevia for 20 seconds
  3. Stir in raspberries by hand
  4. Divide batter between 8 paper lined muffin cups
  5. Bake at 350°F for 30 minutes
  6. Cool 30 minutes
  7. Serve

  2. For those who are not following a keto diet and are sensitive to high fat, could the oil be reduced without compromising the finished product?

    • DP, thanks for your comment and question! I haven’t tried that, but I do know that if you change the recipe you will alter the finished product. If you decide to experiment I hope you’ll let me know if it worked :-)

  3. I’m wondering if anyone has tried replacing coconut oil for the grapeseed oil? I’ve always thought that grapeseed oil is not keto.

    • Tracy, thanks for your comment. Grapeseed oil is a keto food, it is not an acceptable food for the paleo :-)

  4. I’ve made these about a million times now. I have also started changing up the flavor profile, using other berries, using lemon zest and poppy seeds, vanilla and rose water and one of the most popular mod in my family is using vanilla and cardamon.
    Thanks for a great template for loads of fun flavor profiles and a great carb count.

  6. Great recipe, works really well. I don’t have almond flour in my country so I use almond powder and honestly, it really has the texture of a cake at the end.

    I also substitute grapeseed oil for olive oil and it works like a charm.
