Sugar-Free Low-Carb Muffin Recipe

Low-carb almond flour produces the perfect crumb in this easy muffin recipe. Lightly sweetened with stevia, raspberries and lemon zest then round out the flavors of this incredible low-carb muffin. I like 'em sliced in half, toasted and smothered in butter. They're good for breakfast or dessert and amazing with a cup of Dandelion Coffee, or my Ketoccino.

Sugar-Free Sweeteners on the Keto Diet

I think choosing the right sweetener for you can be the most challenging part of the Keto Diet. There are so many options! I'll be writing about this more in the future. Many of us with leaky gut, autoimmune disorders, and other conditions will do best avoiding corn-based sweeteners like erythritol which may be harmful for a variety of reasons including gut dysbiosis, a fancy term for a digestive system that is out of balance.

Easy Sugar-Free Dessert Recipes

I use stevia in this recipe and my other Low-Carb Diet recipes. I do have one exception for you, it's an amazing keto recipe that I cannot eat, but that my family absolutely adores. That would be my Keto Brownies.

  1. Elana,
Thanks for all the wonderful recipes! I cannot wait for your keto cookbook to come out for I can’t keep my A1C numbers down and I’ve decided to go on a keto change of eating plan. Thank you for all your hard work on creating recipes for people who has a health issues.

  2. Just finished making a double batch of these muffins. The only substitution I made was using 1/4 tsp regular sugar instead of the 1/8 tsp stevia as I didn’t have any artificial sweetener. I used a #24 ice cream scoop and ended up with 20 muffins. I guess I could have left out the sugar as I don’t miss any sweet taste. This is a great recipe and thank you for sharing it.

  3. I just have the plain Stevia drops – the bottle looks the same as the one you used, but mine’s not the vanilla creme. Could I use my Stevia instead and just add some vanilla to the recipe? What quantity of both should I use? Thanks so much for this recipe – I really want to try it.

  4. Amazing! Beautiful, puffy, great tasting muffins! I’ve had a challenge finding any sweetened keto recipe that doesn’t make me feel sick. Both the combination Erythritol/stevia and Erythritol/Monk Fruit extract that I’ve used in other keto recipes make me feel sick.

    • Mary, same here! Any product with erythritol is like poison for my body. I’m so glad to hear that these muffins were great :-)

  5. Thank you, Elana for this recipe. I made these yesterday (using avocado oil as that is what I had). Delicious and kind to the body! Will be regularly making these.

  6. I just started to go a little more paleo/keto – and this recipe helps me to keep going. I just bought your book and I am happy of all the great recipes. Thanks so much!

      • Elana,
I recently purchased 2 of your books for my son who has a gluten intolerance. He is enjoying your recipes very much. I’m wondering what your thoughts are pertaining to organic monk fruit sweetener verses stevia?

  7. Can an egg substitute work for this recipe (flax, banana, applesauce, etc.)? If so which one & how much?

  8. Thank you for giving us recipes without erythritol and made with stevia!
I have printed off so many of your recipes over the past couple of years I started to wonder—if I just ordered all of your books would I have most of the ones you post on Facebook? I understand you constantly develop new ones, but in general…
I like to have your latest and greatest but I have a plethora of random pieces of paper floating around my kitchen, maybe it’s time to pay the bookbinder.

    • Mandy, thanks for your wonderful comment! For the most part the recipes in my books are different than the ones on my website. There’s probably less than a 5% overlap at this point. I’m so glad you are enjoying my healthy recipes :-)

  9. Do you happen to have the macros on this recipe? Would love to try this recipe :) just curious as to the fat, carbs and proteins in this muffin to fit it into my diet. Thank you :)
