 These dairy-free Ice Cream Sundae Cupcakes are the perfect summer treat. I love making this healthy dessert on the last day of school when the boys and their friends crowd into our house to celebrate.

Sometimes I assemble the Ice Cream Sundae Cupcakes for everyone. Other times I set up all of the components buffet style and let everyone have fun building their own Ice Cream Sundae Cupcakes. The great thing about this dairy-free dessert is that it’s fun, refreshing, and festive. If you use the Vegan Chocolate Cupcake recipe from my second book, Gluten-Free Cupcakes, then this is also an egg-free dessert. I love serving healthy desserts that everyone can eat, regardless of their food allergies!

Instructions
  1. Place cupcakes on a large plate
  2. Scoop ice cream on top of each cupcake
  3. Spoon whipped cream onto ice cream
  4. Top with gluten-free sprinkles and a cherry
  5. Serve

  1. They look sooo.. good but am on SCD (no grains or starches, or chochlate) and need to blender everything currently.
    WOndered about using marzipan or almond paste instead of flour.
    Did see an organic honey sweetened marzipan online.
