What is Orange Cake?

You might be wondering, what is Orange Cake? I’m glad you asked! I first came upon an orange almond cake recipe in the 1990s in one of Claudia Roden’s cookbooks, The Book of Jewish Food.

Roden is a British cookbook author, food scholar, and cultural anthropologist. She is also one of my heroes. According to Roden, orange almond cake is a traditional Sephardic recipe commonly served at Passover.

Passover Cake Recipes

This Orange Cake is perfect for Passover because it does not contain chametz. As an aside, all of my recipes are Kosher for Passover since they also do not contain this substance.

Whole Orange Cake Recipe

It seems weird to make a cake with whole oranges. However, using the orange with its peel is what makes the Orange Cake with Almond Flour moist and totally unique.

Yes, as I mentioned, use the entire orange including the peel! Make sure your oranges are fresh and sweet so the cake tastes delicious.

Ingredients

Instructions

  • Wash the oranges and boil them whole (peel and all) for 1½ hours, or until soft
  • Place whole oranges (peel and all) in a food processor and blend until smooth
  • Pulse in eggs, honey, almond flour, salt, and baking soda until well combined
  • Pour batter into a greased 9 inch springform pan
  • Bake at 375°F for 35-45 minutes, until a toothpick stuck in the center comes out clean
  • Cool in the pan for 2 hours
  • Serve

Make Ahead Cake Recipe

You can make this cake recipe ahead of time, that’s what I do when we’re entertaining.

If I’m having people over for Shabbat dinner, I make the cake Wednesday, let it cool on the counter overnight, then wrap it and store it in the fridge until Friday.

I tested this Orange Cake with Almond Flour recipe a couple of dozen times to perfect it so am not sure how substitutions would work.

  1. My daughter is on the SCD and has to eliminate eggs from her diet for a while. Do you have a suggestion on how to make this cake without the egg? Thank you!

  2. I cut the oranges into segments around 7 to 8 slices per orange and toss them for a few short minutes into a small pressure cooker with a steaming pan inside. A cup water suffices.
    The oranges cook to perfection during the cool down and are ready to be mashed up.

  3. This is an amazing cake the first one was too moist (it tasted juicy ) second one I did cupcakes and cooked a little bit longer & smaller oranges better. I’m going to try the chocolate chips today that sounds great

    • Sandy, for the moisture issue, make sure to use the orange weight recommended in the recipe and the cake will be perfect every time :-)

I made it with monkfruit, drizzled an 85% chocolate bar on top….made another one with stevia chocolate chips inside (added after the food processing) and another with the 85% chocolate bar in the food processor.. so good!   5. Made thus cake for Easter and it was incredible. Loved by all and could not have been easier. I used 4 organic cuties and 20 mins steam function in Instant Pot vs boiling. Easy peasy! Thanks Elana!

  6. I chose to make this for our Easter Sunday lunch to accompany breakfast sausage from a local farm. I was so nervous to make this cake and watched my oranges the whole time I boiled them. I could not get them to fully submerge because they wanted to float, so I kept turning them to make sure they were evenly softened. After all my worry, it worked exactly like Elana described! I am still fascinated that the ENTIRE orange is used!

    Unfortunately, my oranges were a a little bitter so the cake was too. It was very moist, as described, but I might experiment with finding a way to make it just a bit more dry.

    All in all though, it was a success and I will be making it again! In fact, when my husband found out the orange cake I was making was from Elana’s website, he said “oh, then it will definitely be good!” Thank you, Elana, for giving me reliable, allergen-friendly recipes that even my “Frasier” husband loves!
