Crazy for Kale

Some people are crazy for Vail. Some people are even crazy for Quayle. But me? I’m crazy for kale. And so is my friend Hallie Klecker, who released a new e-book today titled Crazy for Kale: Glow from the Inside Out with 40 Gluten-Free, Dairy-Free Recipes.

Hallie is a well-known food blogger; you can purchase her book while it’s still hot off of the e-press. It is available for $5.99, and it contains 40 recipes (33 are Paleo/grain-free, 31 are vegan).

According to the website, kale provides comprehensive support for the body’s detoxification system. Further, kale provides cholesterol-lowering benefits, and also reduces the risk of certain cancers.
Researchers can now identify over 45 different flavonoids in kale, including quercetin. Kale’s flavonoids combine both antioxidant and anti-inflammatory benefits and help to prevent oxidative stress as well as chronic inflammation.

As you can see, both Hallie and I are head over heels crazy for kale. Here are some of my own kale-icious recipes.

My younger son and I make a raw kale salad at least once a week. He is adamant about massaging the kale for at least a few minutes in order to make it more tender, and takes great pride in seasoning it as well.

    Just a note people, eating excessive amounts of raw Kale and other veggies of this type can have a serious impact on your health DEPENDING on your constitution.

    Can Eating Too Many Raw Greens Harm Your Body?
    You may have heard warnings about goitrogens in raw brassica vegetables (like kale, turnip, collards and cabbage) or about the oxalic acid in spinach. It is true that all leafy greens contain certain antinutrients as a defense against herbivores. In large amounts, these phytochemicals can cause health problems. Those with pre-existing health conditions such as impaired thyroid hormone production or susceptibility to calcium-oxalate kidney stones might need to approach green smoothies with a little caution.
    However, the antinutrients found in edible leafy greens are in sub-toxic doses when consumed in normal-sized portions. A healthy person with no underlying thyroid disorder would have to eat a TON (maybe three or more whole bunches per day) of raw kale over an extended period of time to cause any adverse health effects.

      Elana’s Pantry is a blog…so of course she is going to write about things that interest her and what’s going on in her life, especially pertaining to food. Everything in this blog post is about loving kale. So she happens to mention her friends loves kale and wrote a book. If her sole intention was to make everyone buy the book, she wouldn’t have linked her own 16 great recipes for kale. If you’re not interested in buying a book, then simply check out Elana’s recipes.

    As a person that is krazy for kale I am super excited to try out these recipes, thanks Elana!! I have to admit that the kale almond pesto sounds superb. Most likely will whip that one up tonight. ;D

    Oh my goodness, I love kale too! I live in a rural area and my dad planted mixed greens as a fall and winter crop and the deer ate our kale, so they love it too! lol. Thank you for all the wonderful recipes.

    I like kale, but find a full kale salad to chewy. So I enjoy mixing kale with other herbs and greens.

    Will have to check out some of your links for kale though .. maybe I’ll find something new to try :-)

    Thanks for putting all your kale recipes on one page! That makes it so easy for me. I, too, love kale and try to incorporate it into meals. The new ebook looks like another winner, too.

    Just thought I would mention that if you have hypothyroidism you should not eat any cruciferious family veggies raw. They contain goiterogens that can cause further suppression of your thyroid function and cooking neutralizes these components. You can still indulge in these wonderful recipes if you lightly steam the kale first. I love my kale and include it in my diet, but make sure to cook it first.
