I love making candied nuts during the holiday season. There’s something very festive about them and they are satisfyingly sweet and filling at the same time. Lately I’ve been on a candied pecans kick. They’re super easy to make and my husband loves them.
You could jazz up this recipe with some spices like cinnamon and cayenne (I think both together would be delicious), however I’ve been enjoying the simplicity of merely sweetening the nuts lately. These nuts make one delicious gluten free snack –and there is nothing like it in my gluten free cookbook, so enjoy it here for the taking!

Hi, I made these pecans, using melted butter instead of the olive oil, plus a touch of cayenne pepper, and Himalayn pink sea salt, and they were, well, gone before they totally cooled! That’s how awesome they were. I found this recipe because I searched for yacon recipes, which are scarce. Thank you, thank you!

Hi. I just recently found this recipe. My son and I both are off of sugar and we have the tradition of making candied pecans for Christmas and I wanna try these made with honey and some spices. Has anyone tried that and do they become crunchy or do they stay sticky?
Elana says
Ann, thanks for your comment! When I make these using yacon they are nice and crunchy :-)

I hate to have to display my ignorance in this manner …. but, what is yacon?

Retha,
That sounds scary and I would not eat that. I use a brand (linked in the recipe above) that is certified organic and delicious too!

Is it safe for children to eat desserts made with Yacon Syrup? My bottle says not for children!

Can you substitute honey or agave if that’s all you have around?
