Giveaway: Vitamix

Today I’m super stoked to offer you all the chance to win a Vitamix 5200, my favorite high powered blender. I’ve had my very own Vitamix for 11 years; The whole family enjoys its features and we put it to use several times a day, no joke!

I use my Vitamix for literally everything from soups to smoothies to dressings to pancakes.  It is also my go to kitchen tool when making homemade nut milks.

Entering this giveaway is quite simple.  Just leave a comment below letting us know what your favorite Vitamix recipe is from Elana’s Pantry, or tell us about one of your own.  I will pick one winner at random.     I love my smoothies in the morning! Oh, the possibilities for me with something like a Vitamix! I also love to mix up a batch of pancakes. They are a quick treat for me. Often I’ll cook up some bacon and make my own “McGriddle” sandwiches for a few days with 2 pancakes, bacon, cheese, and an egg. Oh so good!!!

    I have dreamed of a vitamix for so long. I have ruined 3+ blenders trying to make green monsters! They are so delicious and a great way to get in your fruits/veggies in the mornings but I’ve had to stop making them because I can’t keep buying blenders that only last a few months.     Thank you so much for this competition and for your great site. I love the fact that you not only cater for coeliacs but you also have the occasional raw recipe which, as I try to eat a high raw diet, are really inspirational. In particular I love your Espresso Power Bars, which I make with carob rather than cocoa, but which is equally fantastic :) I make mine in my current cheap and cheerful blender, which is nowhere near as fabulous as a Vitamix, which has been on my wish list for a long time now.

    My favorite is the red velvet torte. We bake them into borwnies that my kids call ‘beeties’. Some times we frost them with vegan chocolate icing.

    I would love to give this to a friend who has helped me incredibly on my journey. She so wants a vitamix but can’t afford it.

    My favourite blender drink is:
    – 1 banana
    – 1 avocado
    – scoop (or two) plain yogurt
    – sprinkle of flax/protein powder
    – almond milk

    I can imagine you use yours daily. I worked with two when I had a job at a cafe. They’re work horses and especially easy to clean!

    The hot cocoa recipe is by far my favourite ever. Ever since I went to Austria as a child I became obsessed with hot chocolate, but unfortunately most hot chocolates are very high in sugar. So how happy am I that I can now include an even better version as part of my healthy diet. But I sure could do with a vitamix to blend those cashews nice and smooth. Hx

    My favorite is your cherry strawberry ice cream :)

    I do not have a Vitamix but I quite often make a smoothie version of your green lemonade too. The only difference being that I use celery instead of cucumber.

    Oh my, winning a new Vitamix would be SPECTACULAR! My favorite Vitamix recipe has to be the “Chocolate Sorbet” for its simplicity (only 3 ingredients) and wonderfully decadent flavor.

    My favourite vitamix recipe? Mango Smoothie.

    Take a large fresh mango — as ripe as you like — and a handful of fresh figs. Blend with a large spoonful of Greek yoghurt (or non-dairy substitute), and some ice cubes. Add water to the desired consistency. Enjoy! Some people like to add a banana, but I find that it makes the smoothie too thick.

    Thanks for the contest and I love the Kale Creamsicle. I have osteoporosis and I am not taking meds but have changed my diet and drink the Kale Creamsicle everyday. I have a blender, but I know it would be even better in a Vitamix!

    I don’t have a vitamix! Therefore, I can’t leave a comment about a vitamix recipe. I did recently make a socca (chickpea flour, a little oil, salt and water) in the blender. You heat a cast iron pan in a 500′ oven (oil it first) for about 10 minutes. Then you pour the hot batter into it and back into the oven for 12-14 minutes, then open door of oven for 6-8 minutes to let humidity escape. We ate it with a tomato sauce with chickpeas but you can put anything on it you like. It is a bit like polenta. You can make it thin and crispy or thicker and denser depending on the size of your pan. I don’t know where chickpea flour fits on the spectrum of people avoiding grains but it is really good.

    I have been wanting and saving up for a Vitamix for a while. As a vegetarian and a member of a local CSA (Community Sponsored Agriculture, I am often overwhelmed with produce. I know the Vitamix would help me create more delicious meals quicker. I love the pumpkin ginger soup made with veggie broth. Thanks for all the time and love you put into your posts.

    I found your website about a year ago when my daughter was diagnosed with Celiac. Thank you for your leadership in this area! I love my Vitamix and just yesterday I used it to whip up your Apple Cinnamon cake. So yummy. My kids also love the Pumpkin ice cream! Another favorite is a green smoothie (kale, spinach, parsley, mint, pear, plus some SoDelicious Vanilla Coconut milk). A great way to start the day!

    We have a family full of different food allergies and intolerances. Our favorite would have to be the gluten free pancakes. I make them with mini chocolate chips with fresh strawberries on the side. Last time I made them, my 2 year old ate 12 of them. YES ! 12 !! =) She loves everything I have made so far from your website and book, we all have. I enjoy your daily emails with something new to try. We would love a Vitamix, it is on my Christmas list which will replace our cheap and and currently broken blender.     I would use this Vita-Mixer to make my breakfast smoothies: 1 c. Plain yogurt, 1 c. Fruit, 1 t. Coconut oil, 1 t. Cod liver oil, 1 t. Almond butter and 1 T. Agave or honey. I would LOVE, LOVE, LOVE to have this to make more yummy gluten free foods for my son! Thank you.

    I don’t have a vitamix, so there are recipes I haven’t been able to fully explore with my good (but not great) blender. However, I am fairly sure that your vegan ice creams and sorbets would quickly become favorites, they sound divine!! I could really go for some pumpkin ice cream right now, even if it is 7:30 am :)

      Hi Elana,

      My response keeps disappearing so I hope this one makes the post.

      My favorite Vitamix, Elanas Pantry recipe is the gluten-free pancakes. This recipe is so versatile. For instance, I add 3 bananas, increase the baking soda to 1 teaspoon and the almond flour to 2 cups. Pour mixture into either mini muffins or standard muffins and bake at 350 degree for 15 mins for mini muffins or 22-25 minutes for standard.

      I’ve also adapted the recipe into pumpkin and chocolate muffins.

      I would love to win the VitaMix so I can continue to offer my family healthy foods as two of us suffer from Celiac disease.

    I do holistic nutritional counseling and am always recommending a Vitamix to clients yet I still do not have one. Hmmm. I make smoothies everyday…. green, raw milk, and fruit in the summer. I have trouble making nut butters and nut milks in my current blender that are smooth. A Vitamix would be a great addition to my kitchen.

    I am so thrilled! I am quite sure that many of the recipes that I am using would be improved if I used the Vitamix. Muffins, soups, cookies… my family loves all of Elana’s recipes. We are not even gluten free, just lovers of good food! One recipe that I am interested in is Indian naan or roti (bread).

    I do not have a Vitamix (sure would love one though!!) but I have had a delicious green smoothies at my friend’s house ..who does have a Vitamix. I have been looking into them because I have a hard time getting my children to eat their veggies and they really enjoyed the drink my friend made.     I tried the vegan pumpkin custard that uses a vitamix. Although I had to use my blender because I don’t yet have a vitamix, the blender worked ok, but didn’t sufficiently mix in all the spices I had to keep going in and mixing it with a spatula.
    I would LOVE to have a vitamix, my entire world of food would be expanded. Oh boy, fun with food :-)

    We’ve had our Vitamix for over 20 years, use it many times daily, and though it’s hard to choose just one recipe, this would be our Fall favorite:

    Curried Tomato-Bell Pepper Soup
    8 servings

    2 tablespoons canola oil

    4 cups chopped onions

    3 cloves garlic, minced

    2 tablespoons curry powder

    1 tablespoon chopped fresh ginger

    1/4 teaspoon crushed red pepper flakes

    5 cups reduced-sodium chicken broth or vegetable broth

    1 (29 ounce) can diced tomatoes, undrained

    1 (15 ounce) can pure pumpkin

    1 (6 ounce) can tomato paste

    1 cup diced red bell peppers or orange bell pepper

    1 cup diced green bell peppers

    1/2 teaspoon salt

    1 cup whipping cream or half-and-half

    1/2 cup chopped fresh cilantro

    1. Heat oil in Dutch oven or large pot over medium heat until hot.
    2. Add onions; cook 5 to 7 minutes or until tender.
    3. Add garlic, curry powder, ginger and crushed red pepper; cook 2 minutes.
    4. Add broth, tomatoes, pumpkin, tomato paste, red bell pepper, green bell pepper and salt.
    5. Increase heat to high.
    6. Bring to boil; reduce heat to medium-low.
    7. Simmer 20 minutes, stirring occasionally.
    8. Puree in Vitamix until smooth.
    9. (Soup can be made up to 1 month ahead and frozen. Thaw in refrigerator. Bring to a simmer over medium-low heat; continue with remainder of recipe.) Pour back in Dutch oven and add cream; cook 5 minutes, sitrring occasionally.
    10. (If using half-and-half, do not let boil.) Garnish with cilantro.

    My favorite is the Flourless Chocolate Banana cake! I can’t eat any grains or dairy and I LOVE chocolate, so this is right up my alley. The bananas are a plus! This is a recipe that my husband and others enjoy as well. I use a raw organic cacoa powder in place of regular cocoa powder in all of my recipes. Desserts are not the main part of my diet, but who doesn’t just have to have a delicious dessert now and then? It’s great to bring to gatherings where there will be plenty of gluten laden desserts that myself and others there cannot eat. We get something extra special, and healthier than those gluten desserts on top of that! I would certainly make great use of the Vitamix!

    Vitamix could be used for anything and everything if I only had one. I love any of the creamed soup recipes but also do them all dairy free, anything with pumpkin so the pumpkin ginger soup is HUGE. Would so love a Vitamix. I look all the time on Craigslist but quelle surprise no one ever selles them!!!

    My very VerY VERY old and in need of replacement Vitamix is also a staple. It is the BEST machine in our LIES! Our most common recipe which we make daily is a chocolate smoothie. The kids (since they were 2 years old!) request it and it is such a healthy way to start the day.

    1 banana
    2 ice cubes
    1 1/2 tsp cocoa powder
    1 scoop vanilla protein powder
    1 cup milk of choice (we use vanilla soy)
    1 TBSP Peanut butter

    *sometimes we throw other boosters in here like goji beans or flax
    **although we try to stay clear of simple flours, we are not 100% gluten-free so, this recipe may contain some gluten products..not sure??

    I have been gluten and dairy free for 4 years now. My mother has let me borrow her vitamix for the past 2 years. She has just recently asked for it back. Having used it for almost every recipe I make…I depend on it. I destoyed several blenders before the vitamix. I have a long list of food allergies, and have to make everything myself. My favorite thing to make regularly right now, would be dressings. I make my own version of your creamy cranberry dressing with leeks, almond butter and orange juice. Of course- I love making a butternut squash bisque this time of year as well.

    My heart stopped when I saw vitamix giveaway. I make Butternut Squash Ginger Soup instead of your pumpkin. I peel the squash with my vegetable peeler and blend the soup with a hand mixer – it works. Ocassionally I make seed milk but not often enough – I blend it several times then strain it. My eleven year old makes your Silver Dollar Pancakes every weekend! Thank you for all of your recipes. I tell everyone about your website – GF or not.

    I make a smoothie with lots of greens (a variation of a Dr Oz one) and it puts a strain on our regular blender. A Vitamix would be a most welcome upgrade.

    In the Vitamix I’d make a million things. A favorite would be Elana’s pumpkin custard-the recipe is fast yummy and nutritious (shhh! don’t tell about that last word). I’ve sometimes modified it substituting sweet potato for the pumpkin and orange zest for the lemon and it is equally fabulous. Thanks Elana!

    I don’t own a using a food processer has been the only option. I started using your recipes along with your cook books around the first of this year. It has greatly improved my over all health and well being, but the best suprising result is the loss of 20 lbs! Just eatting a healthier diet! I have a 16yo son that has also loss 30 lbs!     I have killed 2 Osters and my current one is making noise. I use it daily for green smoothies. My iced frappoccinos in the summer with all that ice make Oster unhappy. I also use it for pancakes and a pumpkin muffin recipe that doesn’t use eggs (flax meal instead). A vitamix would be warmly welcomed!

    Definitely, definitely the pumpkin pie ice cream! Here in Australia pumpkin pie pretty much doesn’t exist (unless you make it yourself, of course), and nor do many vegan ice creams. What I wouldn’t give to easily make my own version of your vegan pumpkin pie ice cream!!

    I would LOVE one of these!! I have a centrifugal juicer, but this removes all of the fiber :-( … I also have a favorite protein drink recipe with almonds in it, but there are always little chunks of almonds left in the bottom of the glass :-(
    Here is the requested recipe:
    AM Protein Drink
    1-2 Tbsp. Protein Powder (mine is rice based)
    1 Tbsp. Flaxseed
    1 Tbsp. Lecithin granules
    8 Almonds
    1/8 tsp. Cayenne
    8 oz. water
    Add some sunnies or pepitas if desired.
    Blend vigorously in a BRAND NEW VITAMIX!!!!!!

    Hi, I have a wacky, but very satisfying diet of gluten free, dairy free low carb and the first thing I thought of with the Vita mixer was making one of the ice cream recipes. When I read the recipe for the pumpkin spice ice cream my mouth was watering. I would only have to figure out a no carb sweetener that would work. I also want to make my own coconut milk, it is the only “milk” I use and I now use canned.

    What a wonderful giveaway! I have a friend who is a chef and absolutely drool over his Vitamix every time it’s around. I have Ulcerative Colitis and therefore have limited absorption of vitamins and minerals from my food. When I fall very sick my friend has brought me “meals” that he has pureed and made beautiful and palatable using his Vitamix. That thing is more than a blender that’s for sure! It would be wonderful to have such a tool and experiment with healing foods. Thank you for all of the work you do Elana.

    WOW! What an incredible opportunity! You are awesome Elana! I am currently living in Spain, so finding organic gluten free flours can definitely be a challenge. I have been starting to make my own and don´t know why I haven´t thought of it earlier. I have made my own organic brown rice, amaranth, quinoa, millet, almond, coconut, and oat flour with the blender I currently have. It gets the job done but nothing like a vitamix would. Its so easy just to throw in the grains and grind with the blender until you get a fine soft flour, its much cheaper than buying the prepackaged flours and has worked out great for me! One day I will be able to have my own, the possibilities are endless!

    Definitely, I would have to say your ice cream recipes are my favourite blender recipes. Since I discovered your Vegan Vanilla recipe, I use cashews all the time to make dairy free ice cream. I can only imagine how much smoother a result I could get a with a Vitamix!

    I made your cinnamon apple cake last night in my blender. AMAZING!! I only had cashew butter on hand and am allergic to oranges. I used 2 tbsp water instead of juice and cashew butter instead of almond butter. They were a true hit in my house :O)

    What an awesome giveaway! We have been saving over the last year to buy one. We’ve gradually been changing the way our family eats and owning a VitaMix would be incredibly helpful. We’ve been using our waring pro to make nut mylks, nutrient rich smoothies, soups…etc. it doesn’t do the job nearly as well as a VitaMix.
    Our favorite recipe is asparagus soup – smiplest of recipes but packed full of flavor and nutrients. Asaparagus, Organic coconut milk and rapunzel vegetable broth [we prefer the herbs and sea salt one]. It’s deilicious served cold or hot and doesn’t offend ONE food allergy! It was our saving grace when I was diagnosed as a celiac. It also freezes well!

    Oh wow! I’ve been dreaming of getting my own Vitamix one day…

    I first learned about Vitamix from your website when I was looking for recipes for nut milks. And since then, I’ve been in awe of all the wonderful food preps and recipes this workshorse can produce.

    My most favorite vitamix recipe is an awesome green smoothie that gives me the energy to live an active life, walking an average of 15 miles a day as well as all of the other everyday duties that everyone else has in everyday life despite a diagnosis of fibromyalgia and chronic fatigue last year. I put a banana or two, some frozen mango, a teaspoon of coconut oil and a very large bunch of kale or spinach and blend. Wow what a nutrition boost to start the day!

    My favorite recipe (not my own) is for dairy-free mock “cheeze it” crackers.

    Place 2 red peppers in vitamix and blend well.

    Add 2 cups raw cashews or macadamia nuts that have been soaked overnight in water and drained.

    ½ teaspoon sea salt

    Pinch of cayenne pepper

    Put the rest of the ingredients in the vitamix and blend very well.

    Smooth mixture thinly on to parchment-lined dehydrator racks and dehydrate at 110-115 for 24 hours. Cool slightly and cut into shapes and serve.

    I just tried your Apple Cinnamon Cake. My first dessert since starting my new hypothyroid menu. It was yummy and the rest of the family agrees too! Great! I’ve always wanted the Vitamix– so much power and good looking too. In the meantime I’ll used old fashioned elbow grease.     Our two young boys (2 & 5) have to be gluten and casein free among many other common foods so your recipes have been a lifesaver in this house! I think their favorite food in the world is your pancakes. They would choose pancakes for every meal of the day if they could, which is why I often sneak in healthy purred veggies like zucchini, squash, cauliflower and pumpkin. A blender comes in really handy for this step, as well!! In addition to the pancakes, we like to make a lot of healthy dips and dressings from scratch, because of all the ickies listed on the ingredients list for their commercial counterparts. I make a lemon avocado dressing, sweet and tangy mustard, yesterday I made a creamy cranberry dressing (yum!).

    My absolute favorite thing to make in a blender is a chocolate banana almond smoothie…or banana ice cream (made of blended frozen bananas.) I tried to make this once on a dinky cheap blender, and it started smoking!!

    I use a blender to make almost everything…tomato sauce, cashew-naise (mayo made from cashews,) soups, smoothies, cookie batter, pesto, chocolate…EVERYTHING! I’m a raw vegan, and one of the staples of a raw vegan kitchen is a Vitamix…which I cannot afford. I have tons of recipes I’ve been dying to try, but I always feel like I can’t because my blender wouldn’t be able to handle them.

    My mom discovered the Vita-mix along time ago too Elana. She was always looking into making healthier foods for my brother and I, and now for my own children.

    My mom just passed away on October 22nd. It has been hard around here without her, and sure it isn’t going to get any better any time soon. She was my VERY best friend.

    When she was sick all she could eat was green smoothies; baby spinach, strawberries, banana, and water. We made them everyday in her Vita-mix. Now that she is gone, I have been making them for myself. It is like remembering her, and doing something excellent for my body too.

    I saw your list of recipes and I am looking forward to trying them. I have 1 month left of college classes before my 1 month break, that is when I am going to be making lots of recipes! Gonna miss her so much during the holiday season. (Sorry to go on about my mom, but she LOVED her Vita-Mix and she is the only reason I know about it and LOVE hers too!)

    I love making your granola recipe. In fact, i requested a dehydrator for Christmas a couple years ago so that I can make it often. I started small and graduated to large batches quickly. I currently use a Magic Bullet and have to really break up the mix in order to get the proper consistency. I have been drooling over my friend’s Vitamix and all it’s power.     Oh what I would do with a Vitamix – it would be so sweet. I only have one fav recipe that was made for me by a friend who happens to have a vitamix – it was a Sweet potato smoothie made with one sweet potato cooked, almond milk, banana and a golden delicious appled – then flavored with honey, nutmeg and pure vanilla – mixed to perfection with ice cubes (the memory still lingers).

    I’ve not ever had a Vitamix or a tool like it before, although I’ve wanted one forever! Our finances have been a bit challenged, and purchasing one of these is on my “wish list.” However, I have been using my blender, and one of my favorite recipes is to take garlic cloves, olives (with liquid), a red, green, yellow, and orange bell pepper, and puree them together. I then mix them with a bit ground turkey and serve over brown basmati rice. Yum, yum! It gets a lot of yummy veggies in a meal!

    1 cup fresh blueberries
    2 sliced pears (left the skin on)
    1 cup vanilla yogurt
    agave nectar to taste

    I have had my Vitamix for about a year and 1/2 now and love making curry carrot soup when it’s getting cold outside. Sometimes I put some chicken in it, sometimes not. It just turns out perfect every time. Usually I make a “green” smoothy in the morning even though it turns out purple at times when I use blueberries :-). Sometimes I add spinach, sometimes I add romaine lettuce. Sometimes a banana makes it into the mix, sometimes some cottage cheese. Whatever I have in the house.

    My favorite is the almond flour pancakes! I make tons and freeze them in small bags. The kids can grab a healthy snack on the go and I don’t feel guilty. My oldest even likes them cold. I also like to make smoothies for afternoon snack. I don’t have a vita-mix, it has been on the wish list for a while. We also tried the spice cake recipe a couple of weeks ago and loved it. We are going to try it with pumpkin this week.

    I love your Gluten Free pancakes. My daughter is addicted to pancakes and waffles and I have been concerned that she gets too many grains and not enough protein for breakfast. When I saw you recipe I decided to try it out one morning. I did it before the kids got up and just had the batter made when they came down. When I served it to them and my daughter tried it she said “These taste different”. I told her it was a different recipe and she said “They are really good”. Yeah! Score one for Elana’s pantry. As I embark into my new career as a Naturopathic Doctor and Wellness consultant one of my goals is to teach classes offering nutrient dense foods that are gluten free. A Vitamix would be such a wonderful blessing to this goal.

    I have been begging my husband for a vitamix for over a year now! I am obsessed with my wonderful food processor & my blender works just fine when i have to puree certain foods & soups. I recently said in a family conversation when asked what is your “favorite invention?” I jumped in & was the the first to respond “A Vitamix (although i’ve never used one) you can literally puree a whole butternut squash whole, it’s fabulous!” not really but they got my point. On that note, elana, my favorite Vitamix recipe of yours would have to be your coveted butternut squash soup… A vitamix blender would get just that perfect texture to a carrot ginger soup or a cream of broccoli soup that can tend to be a tad “grainy” when not pureed with enough power…. thanks for the chance to win this Amazing invention!

    I don’t have a Vitamix, so I can only say that having one would be an incentive to make butternut squash soup more often for my family! That, and the uber-healthy daily smoothie my yoga instructor recommends:

    2 organic oranges
    1 organic banana
    2-4 tbs black sesame seeds–these are full of calcium/protein/iron/essential fatty acids
    1/4 bag of organic frozen fruit–strawberries & blueberries are good
    1 tsp of raw local honey
    1 tsp spirulina
    1/2 tsp green blue algae
    1 packet of sun chlorella–I get the GMP certified brand
    1 bottle of Organic Raw Kombucha–Ginger flavor–great for adding probiotics to your diet.

    After blending, you can add some whole milk vanilla yogurt to make it a bit thicker.

    I like to keep things simple, and reliable. My absolute favorite recipe for a quick pick-me-up and that feeling that I took good care of my self is:
    a big handful of greens (chard being my favorite, but can use kale, romaine, bok choy, etc.)

    a big handful of any berries, usually raspberries, strawberries or blueberries. I use organic fresh if available, but often use frozen orgnanic.

    a little water to make the blending go easier

    Blend, and drink!

    A few years ago, someone used a Vitamix to make me a chocolate coconut mousse (cacao nibs, coconut, coconut milk, etc.). If I had a Vitamix, I’d hunt down that recipe and make it every week! In the meantime, my blender does an adequate job on my current favorite smoothie…frozen blueberries, a banana, buttermilk, vanilla, cinnamon and a touch of honey.

    My favorite recipe using the vita mix is from

    Black Bean Vegetable Soup


    1 Tbs. Vegetable oil
    1 Onion, chopped
    1 clove garlic, minced
    2 carrots, chopped
    2 tsp. chili powder
    1 tsp. ground cumin
    4 C Vegetable broth
    2 (15 ounce) cans black beans, rinsed and drained
    1 (8.75 ounces) can whole kernel corn
    1/4 tsp. ground black pepper
    1 (14.5 ounces) can stewed tomatoes


    In a large saucepan, heat oil over medium heat, cook onion,garlic, and carrots, stirring occasionally, for 5 minutes or until onion is softened. Add chili powder and cumin, cook and stir for 1 minute. Add
    broth, 1 can of the beans, corn and pepper, bring to boil. Meanwhile, in a food processor (Vita mix)or blender, puree together tomatoes and remaining can of beans; add to pot. Reduce heat, cover and simmer for 10-15 minutes or until carrots are tender.

    I usually do not use salad dressings as my homemade just isn’t that tasty so I always just drizzle olive oil. My mixer just wouldn’t cut it for the cranberry dressing you posted and it sounds delish! That would be the very first thing for me to try in my brand new Vitamix.     I don’t have a Vitamix – I have tried to make a few of your recipes without it… and well, it just doesn’t work out so well! We tried the Kale Creamsicle and while the flavor was great – a regular blender doesn’t do much for the texture. If we had one, we’d use it for things like nut butters, hummus, soups – things that just don’t get creamy enough without a Vitamix!

I know that its not really a recipe, but it really is one of the many goodies that I make an almost daily basis.     I would definitely have to say the pumpkin pie ice cream. In addition to having Celiac I have a dairy allergy and soy intolerance. So there is very little in the way of ice cream available to me. I have been thrilled to find some really good coconut milk ice creams in the last year. But I am really excited to find a pumpkin pie ice cream recipe as I have missed having this seasonal treat for the last 15 years. I hope to be making this for Thanksgiving dessert this year.

    I also would love to try making some of my own nut milks as I use almond milk right now for both my cereal and any recipe calling for milk.

    Also a huge thanks to Elana for all the hard work you do and all the great results you share with us. I was able to listen to a web conference a few months back that you participated in and that was informative and fun as well.

    I love love love my green smoothies made in the vitamix. Right now I make mine in a blender so I have fibers from the greens. My kids tell me there is grass in their smoothies….sorry guys. But I tried the same smoothie in a friends vitamix and OMG – the smoothness. Praise you Lord! Anyway, the kids and I have a fav smoothie….handful of collard greens (no rib), frozen banana (on the sweet side), fresh pineapple and coconut water. Yum-e! I try to use a normal old fashioned blender for some, but I know that with a vitamix the recipie would be that much more wonderful.     I would use the Vitamix to make a fruit smoothie. Take a cup of frozen strawberries, and one frozen banana. Add 1/2 cup milk, 1/2 cup orange juice and about 8 ice cubes. Blend and enjoy. Healthy and gluten-free.

    I’ve never owned a Vitamix, have gone through several ‘Magic Bullets’ and currently use a small Oster Blender (which doesn’t have power to do more than mix ingredients most of the time.) So if I had a Vitamix I would probably have lots of favorites and it would help me get going full speed on an “ElANA” diet” (my New Year’s Resolution is to redo my Gluten Free pantry following a list of your most used ingredients )– that would cover my need to be Gluten Free,eat a healthier diet, and possibly even lose weight! You have so many great recipes that I’m hoping to try soon. Just have to find a couple more of the ingredients next time out shopping.
    I think my favorite from your list would be the Flourless Chocolate Banana Cake with a side of Hot Cocoa and my daughter said her’s would be anything with Pumpkin!

    Being an athlete and consuming a large portion of raw foods everyday can be tricky. I rely heavily on super smoothies…my favorite right now is “green gorilla”, since kale is at its peak. I am fortunate enough to have a blueberry farmer as a neighbor, so I stock pile as much as I can at the end of summer, so i can enjoy Blueberry smoothies all winter long.
    I too, am gluten and dairy free, so my base is either coconut milk or almond milk. As far as energy is concerned,these keep me energized and satiatied for hours. I think it has something to do with the accoutrements I add. Macca root is rich in vitamins, minerals and amino acids, it has been used for generations for energy and stamina, cultivated in Peru, this gives my smoothie a delicious malty flavor. I also love Chia, having more omegas than a serving of salmon and absorbing 10x its weight in water, it seems to keep my tummy full for hours(which is a tall task).
    Please try my miracle in a glass!
    Green gorilla
    1 banana
    1 cup bluberries/frozen-so you dont dilute smoothie with ice
    1 cup of almond of cocnut milk
    1 teaspoon maca root
    2tbs chia
    1 tbs local honey
    4 stalks of kale
    1 scoop of hemp proein powder
    1 scoop of rice protein powder-vanilla flavor
    1/2 avacado(if you aren’t concerned with calories) makes the smoothie so creamy
    blend for 1-2 minutes, if you own a vitamix, blend for 30 seconds as they are like little jet engines.

    Favorite Recipe for fruit smoothie

    Has 1 dairy and 3 fruit servings, no added sugar. It makes a delicious and filling breakfast drink. You can add protein powder for even more “stick”

    1 whole ripe banana
    1 cup sliced strawberries
    1/2 cup blueberries
    1/4 cup unsweetened almond milk
    1/2 cup unsweetened probiotic and organic plain yogurt
    1/4 tsp stevia

    Blend until smooth, poor into tall glass (makes 2 smaller or 1 very large serving)

    Hi Elana, I am hoping you will pick me to win the vitamix. I am a 46 year old ovarian cancer fighter. I have been a fan of yours for about two years now. After my diagnosis, I discovered I was intolerant to many, many foods. Over the last two years, I have used many recipes from your site to nourish not only myself, but my husband and two teenagers. My immune system feels like it gets stronger every day with the proper foods being delivered and now it can do the job it is supposed to do – kill those confused cells that are growing cancer in my body – even as I write this.

    I usually take one of your recipes and switch it up just a bit. My favorite, and the one that got rave reviews last year was your butternut squash soup. I add a tiny bit of curry for a bit of flair and then top it off with some almond milk to give it an extra creamy finish. My family could not believe it was gluten and dairy free! And they ask for it again and again!

    Pick me, pick me please. A vitamix would allow me to make even more juice concoctions that will allow my body to absorb the vitamins and minerals so much easier – something that is vital on my way to good health.

    The thing I have always wanted a Vitamix for is to make hot soups on the fly. I love how you can actually cook the soups in the Vitamix. We eat a ton of soups because we are on GAPS and it’s a yummy way to eat our daily cup of chicken or beef broth.

    I also love making my own coconut milk but the Vitamix would make this process easier. And your recipe for DIY coconut milk using the Vitamix looks great!

    I LOVE the VitaMix!!! My parents had one in the 80’s when the VitaMix was new. They purchased it for me to use because as a teenager I was very ill and had to have my jaw wired together for weeks. It pureed everything….a true lifesaver.     I’ve made the pancakes (and so many other recipes from your wonderful book). They were terrific but had to be made in blender. Think they would be more outstanding with a Vitamix.

    Side note: I made your apple muffins for my grandchildren while I visited for 10 days. They went so quickly that I actually made them 5 times while I was there. That is 50 muffins. To say they “loved them” is an understatement! My daughter-in-law is buying your book! She loved them too!!

    Hello! This is kismet. I am on Day 5 of a 14-day cleanse regimen and am so frustrated with my old Cuisinart blender! It leaks and doesn’t perform anywhere near the VitaMix I borrowed from a friend last winter. (It’s been on my wish list since!) Despite the mess, I love making green smoothies, including your Kale Creamsicle and Green Lemonade. I also like the VitaMix recipe for the Ruby Emerald Smoothie:

    2 cups water
    1 medium apple, quartered
    1 cup coarsely chopped fresh kale, large stem removed
    1 cup frozen unsweetened raspberries
    (and I like to add a dash of Stevia Plus)

    I would LOVE to make fresh nut and coconut milks. I’m so interested in trying all your recipes that use a blender. My life is whole foods therapy and medicinal herbology.

    Right now I don’t even have a blender. Things have been rough. First, I was disabled by a medical mishap and told I’d never practice again. Then my significant other was laid off and hasn’t worked in 2 years.

    It was my own tenacity while researching that led me to self-diagnose with gluten intolerance and multiple food allergies. Three years later, I’m doing well enough to return to part-time practice as a Licensed Acupuncturist and Chiropractor.

    So many special allergen-free foods are simply gluten-free versions of the same old highly-processed, artificial and often toxic “junk food” that got us into the disease state in the first place. There’s no vitality or life to them.

    If I were to receive the Vita-mix, it would not only benefit my family but allow me to revamp my practice to focus on helping those with gluten intolerance to make wiser choices with food.

    I am ALL over this offer!!
    I have been dreaming of owning a Vitamix since I was diagnosed with gluten intolerance 2 years ago. It’s very difficult using and losing less quality blenders to to try to get the job done.
    I would LOVE to be able to make pumpkin ice cream, cashew milk, dressings,soups and smoothies. I would try all the recipes if this baby was in my kitchen and I know they would be amazing. ;)

    No question your Vegan Eggnog (dairy free, egg free, gluten free) is the best blender recipe ever – we call it Almond Nog in our house and are totally addicted to it. I never really liked eggnog until I tried your version and “bonus” it’s way more healthy and you can make it when you need it.

    I’ve been gluten free for 15 years now. I have a favorite Butternut Squash Soup recipe that is easy and really good. Just in time for the holidays! A Vitamix would come in real handy!

    Butternut Squash Soup Serves 6
    1 Large butternut squash, baked
    14 oz Vegetable broth
    1 cup rice milk (original)
    1 small sweet onion quartered
    1 med. apple peeled and diced
    1 tsp olive oil
    1 tsp thyme
    1 tbsp curry powder
    1 tsp coriander powder
    Heat oil on medium in large saucepan. Saute onions until soft. Add all other ingredients except rice milk. Reduce heat and simmer 15 mins. Puree (in Vitamix) add rice milk, salt & pepper to taste.
    Bon appetit!

    Oh man! I have a blender but I have purposely *not* tried your pumpkin custard recipe because I know it won’t be able to do a proper job on the cashews! Your cookbook and blog are open in my kitchen daily, btw. I am a diehard fan. I eat your 2.0 bread, green soup, sesame crackers, pumpkin muffins, vanilla cupcakes from the book, coconut flour chocolate cupcakes from the blog, kale tart from the book, I mean the list goes on! I honestly don’t know what I would have done last year, when I discovered my son and I were GF, had I not found your blog. Almond flour is rock and roll — we dig it over here.     1 cup almonds soaked 6 hrs and blanched
    1 tsp vanilla extract about 20 oz water and 2 tsp stevia
    mix in vitamix that I would love to have and then drain in milk bag or through cheese cloth …..yummy with almond flour cookies

    Anyway, my favorite recipe is your avocado dressing. I’m sure that it is much more creamy prepared in a Vitamix vs my regular blender!

    Well, let me start by saying, I drool over the product display and wait through the whole presentations when I see them at the Club stores and county fairs. Often I take more than the one “sample” cup of whatever yummy item they happen to be making. I’m surprised they don’t think I’m stalking them.

    So, if I had to pick just one recipe that I would make constantly it would be the Watermelon Aguas Frescas. So refreshing on a hot day after mowing the lawn. And to have it without all the sugar that is normally in them, that is perfect!

    Now, being on the gluten free diet due to celiac disease, I of course would use the Vita-Mix for so many more recipes, I would probably burn the motor out. HaHa.

    All of your recipes sound delicious! My simple favorite now, while apples are at their best, is to quarter three apples, removing core and stem, place in Vitamix with 1/4 cup orange juice, a teaspoon or more of cinnamon and, if the apples are tart, 10-15 drops of stevia, any flavor! This raw applesauce tastes great alone, mixed with yogurt or dolloped on an almond flour muffin.

    My favorite vita-mix recipe is one I saw demonstrated at my local Costco for spinach ice cream! I had my two sons with me and even my 3 year old who will eat nothing that is green loved it. I tried to duplicate it at home using my blender, but only the vita mix is powerful enough to make it actually taste like ice-cream.

    My favourite vitamix recipe is:

    Vegan Chocolate Sorbet

    2 cups water
    ¼ cup agave nectar
    1 cup dark chocolate chips 73% cacao

    1.In a medium saucepan, heat water and agave, stirring until agave is dissolved
    2.Remove from heat, mix in chocolate chips, stir until chocolate chips are completely melted
    3.Blend mixture in a Vitamix (or other high powered blender)
    4.Cool mixture in freezer for 1 hour
    5.Add to your ice cream maker, following directions per your machine

    My favorite vitamix recipe is my gluten free crepe recipe that uses a brown rice flour blend, with butter and milk and eggs and cognac. It is so good that my family likes it more than wheat flour crepes, which is good since our house is gluten free! I also make a really good blueberry smoothie that I have every day for lunch!

    I use an old burning out blender for so many goodies in the kitchen. Soups (mm, mental note, must make mulligatawny soup), nutmilk, uncheeses, hummus, cashew cream, and on and on.

    Oh my, yes. My favorite recipe is a variation of your Butternut Squash soup, made in the Vitamix. My soup varies each time I make it, depending on what the garden is producing at the time and what I have on hand. My Irish grandmother taught me how to cook by instinct. She never measured anything, except to take a handful of this, a pinch of that. I use various stocks, juices, or left over gravy as a base. Whatever protein (sauteed meat or poultry, beans, etc.) I have. Add vegetables cut in usable sizes. For a squash soup, apples, pecans and ginger. Nut butters are a great addition to soups, and easy to make in the Vitamix. For a creamy soup, cream cooked rice in the Vitamix and blend into the soup. Last, season to taste. Ginger or lemon grass are my favorites.

    The “How-to make your own Almond Milk”! It is a classic in my life, brings back memories of childhood and was how I first found the site looking for a recipe for it! I like to add a date to it to give it a little extra special punch but the blender doesn’t make it as smooth as a Vitamix would. This is one of those items, a Vitamix, that I have always wanted, but have never felt like I could justify it for myself. Justify me!

    Christine’s been helping anybody that will listen in our family to go gluten-free and figure out food allergies. We’ve both watched too many relatives die from cancer and other diseases that were most likely due to Celiac Disease or gluten intolerance.

    Elana, You have saved my family with your recipes and website!! Too many recipes to list as favorites but we use our blender on a daily basis, multiple times a day. We make cashew milk and smoothies daily and Elana’s pancakes and ice creams frequently. Our most recent favorites that require the Vitamix are the Pumpkin Bars and Pumpkin Muffins.     I have to say that I love the DIY Coconut Milk! I use it for coffee creamer (can flavor with different extracts) and in my soups, especially the curried soups and such.     How awesome! My favorite Elana’s recipe using a blender was the Flourless Chocolate Banana Cake. I’m so pleased to see this was one of her recommended recipes on this post! I agree. It’s like chocolate mousse, yum.

    My favorite recipe is almond milk! I am lactose-intolerant, so being able to make my own nut milk so easily is a life-saver!! We have a vita-mix, but i think it’s a different model than this one, because it’s all black. If I won another one though, I would probably give it to a fellow missionary who needs something like this. :)

    OH MY GOODNESS!!!! Most of my friends have a vitamix and I must confess, I am envious….but I’m trying not to be!! :-)~ I told someone recently that the only way I would be able to get one would be if I won one or got one for free somehow. And this is the first opportunity I have seen in hopes of that happening!!!! OK, I rarely ever win anything –and never online for sure. I was diagnosed with food allergies earlier in the year—gluten, wheat and dairy mainly. My 10 year old daughter just in the last month– and her numbers are MUCH higher than mine to gluten, wheat and dairy…..but she is also off the charts with peanuts!!! Sooooooo—life has been REAL challenging lately–especially for her because she is already SOOOOO thin!!!! Packing her lunches for school have been especially challenging and she will rarely eat breakfast due to a belly ache. She is a skeleton with skin on!! My friends keep sharing all these vitamix recipes but I can’t do most of them with my mixer or food processor to quite turn out the right way. I was doing a lot of smoothies this summer with our blender…then it broke. We borrowed a friends to finish out the summer. My 7 year old son has had eating disorders since he was 4 and although I haven’t tested him yet, I am guessing he is likely allergic to gluten and dairy as well. He likes green smoothies though. I have had to buy the ones from the store though rather than making my own since the blender broke. And they are waaaay too sweet. He is gaining weight–opposite of his sister—addicted to wheat I do believe…not overweight by any means but already 6 lbs heavier than his sister who is 2-1/2 years older than him!! Ok, needless to say–we would be SOOOOOOOO BLESSED by a vitamix!!! And I’m confident I would use it ALOT!!!
    OK…to answer the question. I have the almond flour cookbook and I have tried the PANCAKES with a little tweaking–less agave and a tad of arrowroot added. We prefer waffles though, so I have finally figured out the recipe to where both kids will eat them and we all love them! I need to write it down though so I can share it!!
    OH and MY 44th BIRTHDAY is the Nov. 12th, our 17th ANNIVERSARY the 13th……..and of course Christmas not long after all of that…..this would be such an awesome gift!!! THANKS soooo much for the opportunity to have a chance at winning!!!! :-)~

    Those yummy Pumpkin Bars would be so much easier in a Vitamix. My daughter(8yo) and I made them for her class treat for her birthday and the kids begged her to bring some more in. They loved them. There are so many other recipes I would like to try using the Vitamix such as all the vegan Ice cream, but especially the Pumpkin and Coffee.

    My favorite thing to make with a vitamix would be smoothies, smoothies, smoothies. You can put anything in there and the kids will drink it. They feel like they are getting a treat and I feel like I gave them a healthy start to the day or a healthy snack.

    Here’s my favorite:

    Coconut Cashew Pudding

    5 tbs cold water
    1/2 cup raw cashews
    2 deglet noor dates, pitted
    2 tbs dried, shredded or fresh coconut

    Place all of the ingredients in the Vitamix in the order listed.
    Blend on medium-high until pureed and thick, about 1 minute.
    Scoop into a bowl and serve.
    Serves 1.

    Oh, to choose one Elana recipe is really quite a challenge as the Vita-Mix is so vital to achieving the flawless consistency of her many delicious cakes, dressings, brownies, and soups. It’s so easy to use and clean.

    But thinking back on the many recipes I’ve made, I never cease to be amazed after making the Purple Velvet Torte (aka chocolate beet cake). The recipe is ingenious and delicious! Nothing better than boiling a mound of grated beets in agave (even that by itself is tasty) and then blending them with egg and cocoa powder. The batter is lush, regal and completely unexpected. I love this cake.

    Second runner up would have to be the Orange Cake–also a beautiful delicious cake made all the smoother by the magic powers of the Vita-Mix.

    Been dying for a Vitamix. Elana: I love your recipes, you have been addicted to Almond Flour. I believe I have food sensitivities (not celiac) and I find that I Almond Flour works for me. I can’t seem to eat wheat anymore. Anyway, you are my go to for any type of recipe. I tried the pumpkin bars and muffins this week…fabulous, and the kids loved them too (A lot actually).     I use my blender daily (just a cheap-o from target – so I would LOVE LOVE LOVE to have a vitamix).

    I have a smoothie every morning as part of my breakfast with ground flax seed, lecithin, almond milk, and some assortment of berries and other fruit. Sometimes I even put spinach leaves in there. I loves my smoothies to start the day. And having a Vitamix would be so awesome, I could expand the possibilities of what I could make with that so much.
    Thanks for all the great recipes, it is difficult to pick a favorite. I love the Bindi bars though!

    Anyway, our favorite recipe is the strawberry lime shake. Delicious.

    Then again, everything you make is delicious and we eat mostly from your recipes. My husband, who is not a healthy food eater, has actually learned to love your food and I hope he eventually gets rid of the junk he adores to eat. But at least I’m getting some good food into him.

However, I’ve recently started incorporating gluten-free food into my daily routine & I’ve found several of Elana’s Vitamix recipes that I’d LOVE to try: strawberry lime smoothie, creamy cranberry dressing, power bars, pumpkin ice cream, lemon cooler, etc!!

    So, I saw yesterday that you would be giving away a Vita-mix! Then I get on this morning an over 450 comments! Holy Crow! For a few years now I have been searching the classifieds, yard sales, and resale shops hoping someone would be giving their vitamix up for a price I can afford. But alas, apparently the Vita-mix really is that amazing because I have yet to find one! I read on the internet about people who “eat raw” and I really want to start eating a raw diet. I live in rural AR where fried chicken and mashed potatoes with gravy is a staple! And my husband and I have become so accustomed to eating out at fast food places. But, I no longer want that life! I don’t want to eat food that I don’t know what’s in it. It really scares me how many chemicals and preservatives that food has. I want to lose weight and be healthy. A Vita-mix would be the catalyst towards the life I want to live!
    My favorite smoothie that I have been making is called the Pink Pineapple. It has banana, strawberry, pineapple and I throw in some spinach. I also saw a recipe for some chocolate pudding that was made from avocado and cocoa powder. I watch as many videos on the Vita-mix as I can find (we don’t have a Costco or anywhere they do demonstrations). I am also fascinated with almond milk and really want to make my own to add as a non-dairy protein source. Yesterday when I was on your site I saw the pumpkin pie ice cream and I just looks so yummy! My husband is also an ice cream fanatic, and I would love to be able to show him how amazing a Vita-mix would be by making his favorite cookies and cream ice cream. There’s no way our blender could handle that! I really want to make a change in my life by eating healthy and getting in as much natural fruits and vegetables as I possibly can and with the Vita-mix I can make that life a reality! Please help me out!

    Pumpkin Ginger Soup. I haven’t tried all the Vitamix recipes on your site. I would probably have said the cocoa, but I just discovered that I am very allergic to cocoa. With many allergy restrictions in the past 2 years, I am beginning to truly love vegetables. This Pumpkin soup is dairy free. I also like mine with “Indian” spices like curry blends. I also like to cook onions in coconut oil and blend those into the soup. Many friends say they like the hand-held blenders for such soups, but I am giving mine away because I don’t really need another thing and I LOVE my blender. I would certainly get daily use out of a vitamix. I would like to know what to make with leftover nut pulp from making almond milk. That would save me a lot of money, in not purchasing commercial almond milk if I could use the leftover wet almond pulp.

I have wore out several blenders making smoothies and my juicer is about wore out also. I love juicing. My favorite is 2 apples, 4 carrots and a hugh hunk of ginger. YUMM!!     I make a killer Mexican style vegetable soup in my Vita Mix. Also, I make green smoothies everyday for myself and the kids. It’s the best way to get your veggies with little prep!

    Elana, love your website and recipes. My (now 12 year old) daughter was diagnosed with gluten allergy a little over a year ago. The diagnosis was very hard for her to accept. Your website provided such valuable info and great recipes (your chocolate chip cookies were the first thing I made) so she was able to feel “normal” around her friends at school and visiting. Many of her friends (and her older brother) now request “those amazing cookies” when they come over. Most importantly, my daughter is like a new person; healthy (she also lost 17 lbs just eliminating gluten), happy and confident. Thanks for being a part of that.

    Oh, my, the possibilities!!! Start the day off with smoothies, snack on hummus, finish with dressing for the dinner salad. I haven’t met a recipe of yours that hasn’t recieved all five thumbs up and couldn’t possibly pick just one. However, that being said, a couple of my kids have texture issues and I am wondering which blender to try next to get things perfectly smooth…the Vitamix is definitely on the wish list for this! Thanks for the great recipes, hints and cheerful advice! You make switching a large family of five to gluten free much less daunting! :o) Here is a recipe that would be great using the Vitamix:

    Tomato Soup Harlequin
    From the Biosphere 2 Cookbook
    Makes 12 Large Servings

    4 pounds tomatoes, quartered
    1/2 cup chopped fresh basil
    1/4 cup chopped fresh oregano
    1 medium onion, peeled and chopped
    2 potatoes, chopped (no need to peel)
    1/2 cup fresh parsley, chopped
    1 cup plain yogurt

    Place all but the parsley and yogurt in a 4-quart crockpot. Fill with water and cook on low overnight. At least one hour before serving, blend in a blender and return to the crockpot. Cook one more hour. Garnish with parsley and a spoonful of yogurt.
    63 calories/3 g. protein/1g. fat/1.2mg. cholesterol
    **This freezes well. I think I am going to go thaw a bowl out right now for lunch. :o)

    Oh my goodness, this is fantastic!

    As it is winter, all I want to do is eat soup. So your carrot ginger soup is calling to me. My mom makes this great sweet potato soup –she blends sweet potatoes and chicken broth in a cuisinart (a vitamix would be a lot cleaner, I’m thinking!), and then after plating the soup, she puts a dollup of a yogurt-jalapeno-lime mixture. It’s hard to describe, but the lime-jalapeno-yogurt is the perfect compliment to the sweetness of the sweet potatoes… Mmm, now I want to make that soup!

    I absolutely love your Gluten Free Pancakes! I am a pancake freak, I love them. I couldn’t eat any grain for so long and I had to completely give them up. I don’t have a vitamix machine, but my favourite recipe for it would be the “Green drink” from Dr. Oz. Spinach, apple, cucumber, lemon, and filtered water. Add ginger if you want a bite.     My favorite thing to make in my VitaMix is fresh almond milk. I soak 1 cup of raw almonds for 4-6 hours (or overnight). Drain the soak water. Fill the VitaMix with 4 cups of filtered water. Add the almonds. Blend on high for about 90 seconds. Pour into a nut milk bag that has been placed in a wide mouth pitcher. Allow to settle for a few minutes, then squeeze the bag until all the milk has been drained. Place remaining pulp in an airtight container in the refrigerator for a second batch of milk (for best results use within 3-4 days). If desired, place a touch of vanilla and/or honey/agave for a bit sweeter flavor. Mix well. Keep refrigerated. This is fabulous over homemade raw granola and fresh peach pie :)

    Due to heavy metal poisoning, my youngest daughter, now 7, does not eat dairy or gluten products. Over the last two years we’ve completely changed the way we eat, and have truly enjoyed the helpful recipes from your website. My hope is if we win this VitaMix, we can give it to a family we know that has health issues requiring a modified diet and they could really benefit from the blessing of having a VitaMix.     This is so great! We can’t purchase this wonderful machine where I live and my local health food store had a draw for a Vitamix and I must have entered 25 times. I didn’t win but that’s the closest I have been to this wonderful machine. I felt like I actually touched a “rock star!” My favorite recipe is vegetable juice. In my old blender I put whatever I’m in the mood for that day or whatever I have on hand and always add 1/2 an apple for sweetness. My grandchildren love it but wish it wasn’t so chunky :-) Gotta love the honesty of children!

    We have dairy goats. One of the things we do with their milk is freeze it into milk cubes. We can use these to either make goat milk soap, or goat milk soft serve ice cream.

    Our VitaMix is an indispensable tool for hot Texas summer nights and raw goat milk soft serve ice cream.

    We don’t have a recipe, per se, as we just wing it but here are the ingredients for those who want to give it a whirl:

    Goat milk ice cubes
    honey or stevia
    cocoa, berries, preferred flavor
    pinch of salt

    I first used a Vitamix when I worked for a raw food company called kaia foods. I was amazed at how easy it was to make delicious salad dressings and ground your own flax seeds. It really cuts down on the prep time because you don’t have to pre-shop things. Hands down the best blender I have ever used.

    My internet quit as I was posting my comments so I will try this again. So many excellent recipes, so little time! ALL your recipes are great, but here is a top 10 list: flourless chocolate banana cake, ginger pumpkin soup, pumpkin ice cream, pumpkin pie, (do you see a theme here?), butternut squash soup, any veggie and/or fruit smoothie, pancakes, creamy cranberry dressing, almond milk and hot cocoa (a treat I usually can’t have due to a problem with soy). A vitamix has been on my wish list for a LONG time, but I always look at the price and move it down the list. My Sis has one and has told me how wonderful it is and well worth the price. My husband eats gluten and soy free with me even though he doesn’t have to and he feels better than he has in a long time. I feel GREAT after being gluten and soy free for almost 1 year and 8 months. I tell anyone who wants to listen and some that don’t that this is the healthiest diet you can be on. Shop the outside perimeter of the grocery store and be healthy!!!

    If I had a Vitamix (n.), my favorite thing to “vitamix” (v.) would be the rice ‘slurry’ we make for our kimchi. You can use a paste of rice flour and water, but my mother soaks sweet rice in water overnight and puts it in the food processor. Much easier with a Vitamix! Modern americanized recipes usually lack the rice, but it gives a beautiful rich texture and color to the kimchi as it ferments. We still make our kimchi squatting on the kitchen floor, surrounded by piles of baechu and bowls of kimchi paste.

    Now, my favorite recipe of yours, Elana, is not so much a recipe, but you started me on all the different uses for nut milks/butters! Cashew butter I find especially lovely for subtly thickening soups. And when I found out about cashew butter ice cream… Oh my.

    My favorite recipes for a Vitamix, which I currently use on an old Cuisinart, but would love to use in a Vitamix because the liquid spills out of the sides of the Cuisinart, are salad dressings and soups. I love making Mango Lassis that way. Just take Kefir, a Mango, a little Agave, and then cardamon. Blend. Yumm. Kids love it.

    My kids favorite recipe in the VitaMix is super simple. Frozen pineapple and strawberries. That’s it! We call it Pineapple/Strawberry sorbet. Delish! They can never get enough. With four kids, I need a BIG one. My smaller one isn’t cuttin’ it anymore. Thanks!

    11/4 cups of pitted dates
    9 Tablespoons cocoa powder
    1/4 c safflower oil
    1/2 c agave
    2 c canned garbanzo beans, rinsed and drained
    4 eggs
    1/2 teaspoon baking powder
    1 teaspoon cinnamon

    Preheat oven to 350 degrees.
    Measure dates in a measuring cup and pour boiling water to the 11/2 cup line, making sure the water covers all the dates. Let dates sit for at least 10 minutes. Pour off 1/4 cup of the liquid and process the dates with the remaining liquid in the vitamix until it forms a smooth paste. Put the date paste into a large bowl and add cocoa powder, safflower oil, cinnamon and agave, mixing well. Put garbanzo beans and eggs in vitamix and blend until very smooth. Add the garbanzo mixture to the date mixture, stirring well to combine and pour the batter into a lightly greased 9 inch baking pan or pie dish. Bake for 45 minutes and cool for at least 15 minutes.

    I love the pumpkin bars, and so did my kids. But I would have to say the kale creamsicle probably is my personal fave because I’m always looking for another way to get in more greens…and this is more like a dessert.

    Wow, what a great competition! My favorite is the Kale Creamsicle, but I don’t use the protein powder. I put about 1 to 2 Tablespoons each of hemp seeds and flax seeds into the blender jar first and pulverize them. Then I add the orange or a small grapefruit (organic) with a tiny bit of its peel, as I’ve been reading that there are some good phytonutrients in the peel and it spices things up just a little. I also do a mix of greens – usually spinach, kale, bok choy and collards – it depends on what I have in the house. I also sometimes add a bit of turmeric, nutmeg, cinnamon and vanilla, depending on how I feel, again to spice things up.

    My mom had a vitamix and I have wanted one ever since I moved out. I love quick smoothies. Just some frozen blueberries, strawberries, and a splash or two of orange juice can’t be beat. Now I really want one!

    I would like to use it to make my Cashew cream sauce….ground cashews in the vitamix and blend with water and then saute mixture in a saucepan with garlic. In a few minutes it thickens up. Yum! Add ground parmesean if you like. Great over zucchini noodles or over vegetables!

    There are so many wonderful dishes to be made with my VitaMix! But what I use it for the most is for making smoothies. Using the whole fruit, I include apples, oranges, pineapple, mango, papaya, and strawberries. It’s a refreshing and filling breakfast on the go, or a great pick-me-up later on. And way cheaper than those juice places! Besides, this way, I know that I am getting the benefit of the whole fruit, not just the calories of the juice.

    Since I don’t have one, I don’t yet have a favorite recipe for one, but in my blender, my favorite recipe is oatmeal waffles.

    We use our rickety old blender on a daily basis to make everything from smoothies to spicy peanut dressing. Our favorite morning or evening snack recipe is a banana smoothie that tastes like a chocolate banana shake: 1 to 2 frozen bananas (freeze in pieces for easy use), cacao powder, protein powder of choice, 1 TB flax seeds, hemp or almond milk and blend to desired consistency. Enjoy!

    My husband is a survivor of tonsil cancer (5 years!) and our Vitamix has been indespensible in allowing me to prepare whole foods for him for that are easy for him to eat. The radiation treatments that saved his life make it painful for him to chew foods and make it diffcult to swallow. I use our Vitamix to make almond butter breakfast shakes which he loves and lunches and dinner “blended meals” that can include any meat and vegetable that I have cooked up. The Vitamix can turn anything into a smooth and creamy meal. It allows him to eat a healthy diet without the pain – and the blended meals really are quite delicious!

    My favorite Elana blender recipe is not on your list. I make the Jelly Donut Cupcakes in my blender rather than a food processor. They’re so easy to make. I can never think of an excuse not to make them, so I always have the ingredients on hand.

    I would definitely switch over to the Vitamix to make them! Actually, just writing about them makes me want to have them around. I think I’ll whip up a batch today!

    Your Strawberry Lime Shake is excellent. It makes me feel like it’s a real milkshake (I usually add a ton of ice to get it really frosty). I don’t even miss the dairy and the flavors of lime and coconut make me think of a tropical vacation. Yum. Of course, my current blender doesn’t do a very good job of hacking up the pieces of ice (or anything, really) and I’m usually left with a clumpy drink that is impossible to sip through a straw (so I’d LOVE to win the Vitamix and be able to eliminate this problem altogether).

    I love my parents’ vitamix and am saving up for one of my own! My favorite recipe, is
    1 ripe banana
    1 beet, including greens
    1 cup of water
    1 TBSP of flax seed and hemp seed

    Delicious and great for the liver!!

    I dream about owning a VitaMix one, but being a grad student, I have to make do right now. I love making your pancakes and have to use my hand mixer because I don’t currently have a VitaMix (I will one day; i’m saving up). I do make an awesome smoothie in my blender but I bet it would taste even better and be more smooth if I were to use a VitaMix. Here is my favorite smoothie:

    -Frozen mixed berries
    -Egg white protein powder
    -Fresh baby spinach ripped up (you can’t taste it at all)
    -A heaping tablespoon of peanut butter
    -Chocolate soymilk

    *Blend it up; so so yummy!! :)

    I have made so many of your recipies and they are almost always a huge hit with my GF/CF child as well as the whole family. But our favorite so far is the Pumpkim muffins – I’ve made 5 batches in the last 2 weeks! Even wihout a Vitmix it still turned out wonderfully. I can’t seem to keep them for more than a few hours! I turned two of the batches into “pumpkin cupcakes” by using your frosting recipies – That was a HUGE hit for Halloween!!     I have tried your Pumpkin Ginger soup recipe in a regular ole blender and I would love to try it in a Vita-mix.

    My friend occasionally lets me borrow her Vita-mix for a couple days at a time. My favorite things to make are green smoothies in the morning, fresh maple cinnamon nut butters for snack/lunch, and for dinner – SOUP!!! It’s amazing you can make raw soups in the Vita-mix.

    I would have to say my favorite recipe is for the bran muffins. There is just nothing better than starting the day with a gf muffin and a cup of coffee.     My favorite would be any fresh veggie/fruit smoothie that I make. I use leafy greens, some broccoli (love that), cucumber, and in season tomatoes! For fruits it’s whatever is in season. I use yogurt and flaxmeal, too. Sometimes I throw in almonds, pecans, or walnuts.

    Sometimes I make soup.

    I love the mexican chocolate ice cream! but I have wanted a vitamix for so long- we use a blender several times a day, for smoothies, baby food and baking. And I love homemade almond milks, but with an ordinary blender it comes out quite grainy. It’s just not affordable to buy a vitamix with another baby on the way- Could really use the real thing!!

    I absolutely love your gluten free pancakes. I thought the days of indulging in pancakes were over until I found your gluten free pancakes recipe. Using the grapeseed oil gives them a wonderful buttery flavor. Using the blender makes this such a simple and quick way to make them.

    My daughter and husband and I love, love, LOVE your pancakes. We make
    a batch or a double batch pretty much every week. We eat them with
    jam, we eat them with ham. We really do love them — yes ma’am!

    Joking aside, Kylie loves to help me add the ingredients to the
    blender (we have never had a Vitamix but would love to own one
    someday) and watch while I cook them. We have even premade the batter
    and taken it with is in a giant ziploc bag on a camping trip, then
    snipped off the corner and squeezed out the batter for shape-pancakes.

    All the sweets sound wonderful, but I think I’d dive into the mixer with the green chicken soup. I’m a sucker for kale and adding it to chicken soup…even better!

    As for my uses, there are many. Priority would be given to homemade pistachio pudding, though. Yum!

    I’ve had a Vitamix on my wish list for 5 years! I love to make soups and seek the smooth, velvety consistency that only the Vitamix can achieve. I’ve made so many of your recipes and all are yummy and, just as importantly, make me feel good. Right now, your Fennel Apple soup would be delicious! I am also a big fan a dino kale in my smoothies, but none of my blenders have been powerful enough to break down its fibrous consistency. Thanks for your inspiration!
