This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day. Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.
It’s fun (and super easy) to make dairy free ice cream from coconut milk. Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.

Summer is definitely here and our house is the place to be. The neighborhood boys congregate on our trampoline –with the sprinklers aimed at it for a good cool down and a great deal of healthy fun.

When the boys were little we used to have green eggs for breakfast everyday. They grew out of that phase a while ago and now I think this Green Eggs recipe is perfect for St. Patrick’s day.

Tonight is the Oscars and we’re having a nice little party over here (as usual). I’ll be serving this super quick and easy gluten free Mushroom Soup in little shot glasses. We had a huge snowstorm here last night and I made my family a batch of this warming Mexican Hot Chocolate. A hot drink is perfect for a cold day, and it’s even better when warming spices such as cinnamon, chili and cayenne are added.

A piping hot bowl of this gluten free Broccoli Soup is the perfect dish for today. Why? We’re expecting a nice balmy high here in Boulder of 15 degrees, while we’re buried in snow from yesterday’s storm.

I was thrilled to have the darling Kelly and her adorable family over for dinner during one night of Hanukkah a couple of weeks ago. Last weekend my in-laws came out to Boulder to visit and I used them as guinea pigs for this new gluten free Herb Gravy. Thankfully this gravy passed the in-law test served over Mashed Cauliflower. My husband and children liked it too!

This super tart cranberry dressing is the perfect gluten free addition to any fall meal, and is ideal for Thanksgiving. Cranberries are a superfood, rich in antioxidants. I like to sprinkle fresh cranberries on my salad when I use this dressing. Because they are so mouth-puckering and tangy, I spare my husband and children, by using fruit sweetened, dried cranberries as a garnish on their salads, rather than the fresh ones.

This dark green, luscious shake is my go to drink when I need a little protein pick me up.

I’m loving this gluten free, dairy free Strawberry Lime Shake made of fresh homemade coconut milk. My boys love it too. I hadn’t thought of making coconut milk from shredded coconut until I read Sarma Melngailis’ book Living Raw Food. I cannot recommend this book highly enough. Sarma has great recipes and tons of fabulous information for everyone –you don’t have to be raw to enjoy this book.
