Arugula Salad with Raspberry Vinaigrette

Posted on August 9, 2011

There’s nothing like a refreshing salad on a hot summer’s day; this gluten free Arugula Salad with Raspberry Vinaigrette hits the spot.  Finding gluten free salad is easy (arugula and raspberries don’t contain gluten).  Finding gluten free salad dressing is another story altogether.

Gluten lurks in the strangest places.  And salad dressing can contain various binders and flavorings (such as soy sauce) that are not gluten free.  That’s why I like to make my salad dressings from scratch –it’s a lot […]

Peanut Butter Protein Shake

Posted on August 4, 2011

This dairy free peanut butter protein shake is a great way to start the day.  I like to drink it before I go to the gym –the protein (about 50 grams) gives me energy during my entire workout, and then some.

I’ve been on a major peanut butter kick lately, in fact, this is my third gluten free peanut butter recipe in the last week or so.  Earlier, I posted my Peanut Butter and Jelly Cookies, after that I posted my […]

Porridge

Posted on July 27, 2011

I discovered this hot cereal on Ricki Heller’s blog, Diet Dessert and Dogs, after she tweeted it a couple of days ago.  I’ve had it for my gluten free breakfast every day since!  You can call it hot cereal or porridge, either way, it’s a superfood way to start your day, and quick and easy at that. What is porridge?  According to Wikipedia, porridge is a dish made by boiling grains such as oats or other cereal meals in water, […]

Coconut Chocolate Chip Ice Cream

Posted on July 5, 2011

This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day.  Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.

It’s fun (and super easy) to make dairy free ice cream from coconut milk.  Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.

Popsicles from Simply Sugar & Gluten-Free

Posted on June 28, 2011

Summer is definitely here and our house is the place to be.  The neighborhood boys congregate on our trampoline –with the sprinklers aimed at it for a good cool down and a great deal of healthy fun.

With all of this activity I keep the food flowing morning, noon and night.  From the time they arrive until dinner (sometimes a bunch of them stay for the evening meal too) I am setting out munchies –snacks, lunch, etc.  They really are a […]

Banana Walnut Muffins

Posted on May 12, 2011

I originally posted this date sweetened, gluten free muffin recipe the year before last in my Great Agave Debate post.  Because it was part of something so much bigger, it kinda got lost in the mix.  I’m re-posting it because I think it’s an easy, super tasty, healthy recipe that will please both agave lovers and haters alike.

For more information on agave, please check out my Great Agave Debate post and all of the amazing reader comments and debate […]

Green Eggs

Posted on March 14, 2011

When the boys were little we used to have green eggs for breakfast everyday.  They grew out of that phase a while ago and now I think this Green Eggs recipe is perfect for St. Patrick’s day.

Now when I make these, I serve them with chicken breakfast links and my Dark Rye Bread (as shown above).  Green eggs are a colorful, fun, super healthy, hearty way to get in green veggies at the start of your day.  You can also […]

Paleo Mushroom Soup

Posted on February 27, 2011

Tonight is the Oscars and we’re having a nice little party over here (as usual).  I’ll be serving this super quick and easy gluten free Mushroom Soup in little shot glasses.  As you can probably tell by now, pretty much any event is an excuse for me to have people over and cook healthy gluten free food.

I frankly could not really care who wins what awards tonight.  I just like to hang with my posse and have good eats.  In […]

Mexican Hot Chocolate

Posted on January 20, 2011

We had a huge snowstorm here last night and I made my family a batch of this warming Mexican Hot Chocolate.  A hot drink is perfect for a cold day, and it’s even better when warming spices such as cinnamon, chili and cayenne are added.

There is a ton of cinnamon in this recipe, so if you’re not a cinnamon fan, you might want to reduce the amount from 1 tablespoon to 1 teaspoon.  Why do I use so much cinnamon?  […]

Broccoli Soup

Posted on January 10, 2011

A piping hot bowl of this gluten free Broccoli Soup is the perfect dish for today.  Why?  We’re expecting a nice balmy high here in Boulder of 15 degrees, while we’re buried in snow from yesterday’s storm.

I was fortunate enough to spend yesterday, my Sunday, at a yoga class, and then hiking the gorgeous Mount Sanitas in the snow.  As you can see, thus far, the new year is treating me well.

If you’re looking for a healthy soothing recipe to […]

Sunbutter Ice Cream

Posted on December 20, 2010

I was thrilled to have the darling Kelly and her adorable family over for dinner during one night of Hanukkah a couple of weeks ago.  We made a delicious meal using various recipes from each of our cookbooks and websites, and then had the absolutely scrumptious dessert pictured above: Banana Coconut Cream Pie (made by Kelly, a recipe from her 2nd book) with Sunbutter Ice Cream (made by me, another recipe from Kelly’s awesome 2nd book).

Kelly also brought over some […]

Georgia’s Fruit Pudding

Posted on December 8, 2010

I recently fell in love with Georgia Pellegrini’s book Food Heroes and will be giving it to various friends for the holidays.  I am also giving away a copy to one lucky winner on my Food Heroes post from Monday. It’s a great read and has wonderful recipes.  The recipe below is my adaptation of Georgia’s grandmother’s fruit pudding, which I think you’ll enjoy.

This light and easy to eat dessert is a perfect Christmas pudding.  It’s basically made with dried […]

Herb Gravy

Posted on November 11, 2010

Last weekend my in-laws came out to Boulder to visit and I used them as guinea pigs for this new gluten free Herb Gravy.  Thankfully this gravy passed the in-law test served over Mashed Cauliflower.  My husband and children liked it too!

When I made this gravy, I roasted a chicken with onions and thyme and used the pan drippings for the recipe below.  I probably only had a couple of tablespoons of drippings, and I actually think this gravy recipe […]

Creamy Cranberry Dressing

Posted on November 3, 2010

This super tart cranberry dressing is the perfect gluten free addition to any fall meal, and is ideal for Thanksgiving.  Cranberries are a superfood, rich in antioxidants.  I like to sprinkle fresh cranberries on my salad when I use this dressing.  Because they are so mouth-puckering and tangy, I spare my husband and children, by using fruit sweetened, dried cranberries as a garnish on their salads, rather than the fresh ones.

I found this recipe in an old Sunset magazine […]

Pumpkin Pie Ice Cream

Posted on October 28, 2010

Let us now praise all things pumpkin.  I’m kinda obsessed with gluten free, dairy free pumpkin dishes right now, hence the vegan Pumpkin Ice Cream here, and the Pumpkin Bars earlier this week.  And let us not forget the Pumpkin Pie Muffins of last year either.

This pumpkin pie ice cream is a delicious fall treat whether served at Halloween or Thanksgiving.  For more information on pumpkin mania, check out this funny article from Esquire called Some Pumpkin Flavoring Best Avoided […]

Kale Creamsicle

Posted on October 6, 2010

This dark green, luscious shake is my go to drink when I need a little protein pick me up.

To me, the flavor of the kale is not that pronounced, what comes through is the creamy richness of the protein powder with the tart sweetness of the orange, thereby forming a yummy gluten-free, dairy-free creamsicle experience in a glass.  Enjoy!

1 cup kale, chopped
1 whole orange, peeled and chopped

Chocolate Sorbet

Posted on August 16, 2010

This gluten free, dairy free and vegan Chocolate Sorbet recipe is an oldie but goodie from my recipe archives. What are these archives of which I speak? A binder with more than a thousand of my unpublished recipes. Anyway, this frozen treat is one of my mother-in-law’s favorite gluten free desserts, and she asks me to make it every time she comes to visit us.

Chocolate Sorbet is a perfect treat for summer parties, makes a great dessert after a simple family […]

Cherry Strawberry Ice Cream

Posted on July 22, 2010

Given how hot it’s been around here lately, the boys have been jonesing for ice cream, and I’m more than happy to indulge them with my homemade, frozen treats.  They’ve been asking for a chocolate cherry ice cream, which may be coming here soon.  For now, enjoy this gluten free, dairy free Cherry Strawberry Ice Cream.

Cherry Strawberry Ice Creamprint
1 (13.5 ounce) can coconut milk
1 (10 ounce) package frozen strawberries
1 (10 ounce) packages frozen cherries

Apricot Salad Dressing

Posted on July 5, 2010

I took the picture for this tasty apricot salad dressing after my first day at the Food and Light Photography Workshop that I attended here in Boulder, Colorado. I came home, made dinner and decided it would be good to put some of my newly acquired skills to use.

The instructors at Food and Light were amazing. Jen from userealbutter.com organized the entire affair and taught a wonderful section of the workshop on basic photography skills, which some of […]

Watermelon Aguas Frescas

Posted on June 18, 2010

Aguas frescas are a popular fruit beverage from Mexico.  Naturally gluten free and completely refreshing, my children fell hard for this cool drink, taking bottles of it to the ball field yesterday.
