These lightly sweetened dairy-free Fudgsicles are a major hit with my chocolate loving teenage son. He’s been devouring them this summer, eating a couple a day. I like homemade Fudgsicles too as they’re low-carb and sweetened with only one date (in an entire batch of six).

This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day. Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.
It’s fun (and super easy) to make dairy free ice cream from coconut milk. Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.

Summer is definitely here and our house is the place to be. The neighborhood boys congregate on our trampoline –with the sprinklers aimed at it for a good cool down and a great deal of healthy fun.

I was thrilled to have the darling Kelly and her adorable family over for dinner during one night of Hanukkah a couple of weeks ago. I chose to go with a messy “action” photo of this crumble to demonstrate just how much my husband liked it! He came home from work and devoured the section you see missing above. I was somewhat surprised since it was another one of my experiments making a purely fruit sweetened dessert.

This is my favorite ice cream. It’s vegan. It’s vanilla. And it’s yummy.
I’ve been making this ice cream for the last couple of years. Way back when in my New York days, my raw food friends turned me on to the fact that cashews make an amazing substitute for dairy. Chia seeds are my new favorite food!
Rich in fatty acids, these seeds contain more omega-3’s than any other vegetarian source. They are also quite high in anti-oxidants, minerals and fiber. Further, I find that they are quite soothing for my digestive system (and I’m always looking for a boost in that realm).

These gluten free Pumpkin Pie Muffins are, of course, a favorite of my younger son. When he was little, he ate so much pumpkin and winter squash that he turned a slightly orange hue. Luckily, he’s back to normal now.
