I’m on a bit of a raw foods kick lately. I’ve been making nut milks for myself and the boys, and I’ve just created my fourth recipe for this website that uses the leftover almond pulp from my Almond Milk recipe. Given how expensive almonds are right now this strategy is key!

Martha’s Coffee Meringue Acorns make a beautifully festive holiday dessert. Given their seasonal appeal, they are perfect for Halloween, Thanksgiving, and Christmas. These cute maple syrup sweetened meringues, flavored with pure coffee extract, are dipped in dark chocolate and pistachios. Paleo Chocolate Peanut Butter Whoopie Pies are a fantastic holiday treat. This year, I’ll be making them for Halloween, along with my Paleo Bagels. My teenage boys love these Pumpkin Spice Meringues. They plowed through batch after batch as I tested them. Yes, the boys are not only cookie lovers, they are meringue cookie lovers and devour my baking recipes. Right now they are asking for my Paleo Pumpkin Pie a couple of times each week. Paleo Peach Crisp is made with only six ingredients: peaches, almond flour, salt, butter, maple syrup, and vanilla. This healthy gluten-free crisp is another one of my easy-to-make Paleo recipes that has even less added sweetener than usual. The entire recipe has one tablespoon of maple syrup. Better yet? I’m a big fan of gluten free cookies, especially gluten free biscotti.
These Paleo friendly gluten free treats are a great addition to a high protein breakfast and also perfectly suited for dunking in healthy coffee for an afternoon snack that won’t leave you dragging. My children like them too. So do their friends. I wish I could certify certain gluten free desserts that I make as “kid friendly,” like some sort of good housekeeping seal of approval. Alas, no such luck.
