Salt and Vinegar Kale Chips

Posted on January 9, 2011

I made these super healthy salt and vinegar kale chips the other night before dinner, and was shocked, I mean absolutely shocked, that my children ate them.  Not only did they boys eat these, they loved them.  Trust me, while these kale chips are healthy, this is a sophisticated flavor combination for children.

Also, a word of warning, these gluten free kale chips are very salty.  So, if you don’t care for salt as much as we do in this household, […]

Sautéed Kale

Posted on January 5, 2011

I love kale.  My boys love kale.  Even my husband goes for it.  Kale is a universally favorite vegetable in our family.  And boy am I lucky since it’s a superfood.  Given our collective kale obsession, I am always looking for more ways to cook kale, and this is one of my favorites.

Let’s not forget that kale is one of those”naturally gluten free” foods as my friend Shirley would say. So try it, you just might like it.

Sunbutter Ice Cream

Posted on December 20, 2010

I was thrilled to have the darling Kelly and her adorable family over for dinner during one night of Hanukkah a couple of weeks ago.  We made a delicious meal using various recipes from each of our cookbooks and websites, and then had the absolutely scrumptious dessert pictured above: Banana Coconut Cream Pie (made by Kelly, a recipe from her 2nd book) with Sunbutter Ice Cream (made by me, another recipe from Kelly’s awesome 2nd book).

Kelly also brought over some […]

Christmas Chocolate Bark

Posted on December 10, 2010

I am digging this yummy Christmas Chocolate Bark.  Studded with rich pistachios, tart dried cranberries, and speckled with coarse chunks of salt, it’s a winner.

I believe the ideas for this flavor combo came from the fabulous Alison.  I think this bark would make a wonderful gift for the holidays.  Just don’t eat too much of it, as it’s very addictive.

Cookie Mix in a Jar

Posted on December 7, 2010

Update: this giveaway has ended and the winner was Susan!

This year, I’m making many of the holiday gifts that I’ll be giving.  One of my favorite things to give, that you might also like to give to your friends and family, is this homemade cookie mix.

This high protein, gluten free cookie mix is quick and easy to make.  Further, you are giving a friend or loved one a very special present –the opportunity to have the smell of fresh baked […]

Mashed Cauliflower

Posted on November 8, 2010

A perfect addition to your Paleo Thanksgiving.

I’ve been making this mashed cauliflower recipe for several years now.  So I must be on the same page as my readers –when I posted my  Cauliflower Rice recipe I received suggestions from Jose and several others to make mashed cauliflower.

This cauliflower dish (which I make in place of mashed potatoes) is perfect for a gluten free, Paleo Thanksgiving.  I like to have something mashed and gooshy at Thanksgiving not only as a […]

Creamy Cranberry Dressing

Posted on November 3, 2010

This super tart Creamy Cranberry Dressing recipe is the perfect gluten-free addition to any fall meal, and is ideal for Thanksgiving.  Cranberries are a superfood, rich in antioxidants.  I like to sprinkle fresh cranberries on my salad when I use this dressing.  Because they are so mouth-puckering and tangy, I spare my husband and children, by using fruit sweetened, dried cranberries as a garnish on their salads, rather than the fresh ones.

I found this recipe in an old Sunset […]

Pumpkin Pie Ice Cream

Posted on October 28, 2010

Let us now praise all things pumpkin.  I’m kinda obsessed with gluten free, dairy free pumpkin dishes right now, hence the vegan Pumpkin Ice Cream here, and the Pumpkin Bars earlier this week.  And let us not forget the Pumpkin Pie Muffins of last year either.

This pumpkin pie ice cream is a delicious fall treat whether served at Halloween or Thanksgiving.  For more information on pumpkin mania, check out this funny article from Esquire called Some Pumpkin Flavoring Best Avoided […]

Carrot French Fries

Posted on October 18, 2010

My boys love these carrot fries hot out of the oven.  I like baking them as it eliminates the messy splattering that results from the typical preparation of French fries –frying.

Speaking of messes, I feel like I’m cleaning up a lot of them these days. Writing a book this summer really threw me for a loop.  First, I wasn’t entirely planning on it.  Second, I spent just about every waking (and too many that should have been sleeping) moment(s) on the […]

Oven Roasted Broccoli

Posted on October 11, 2010

Oven Roasted Broccoli is a quick, easy and super healthy dish for your entire family.

I returned home from Blogher Food 2010 yesterday and found that the seasons had changed during the mere 4 days I was out of town.  It now seems to actually be fall here in Boulder, which means it is the perfect weather for roasting vegetables.

My boys inhale this naturally gluten free roasted broccoli dish whenever I make it.  Their friend Josh has been known to eat […]

Spicy Power Bars

Posted on September 24, 2010

I’m eating one of these Spicy Power Bars as I type this.  I’m slightly obsessed with them.  Because they remind me of my past.

About 20 years ago, when I was living in New York City and had just hooked up with my adorable husband, I became very interested in Ayurveda.  One of the amazing practitioners that I learned from, Pratima Raichur, had created her own version of a healing tonic, referred to in Ayurvedic circles as chyawanprash.  Her product was […]

Grilled Broccoli

Posted on September 20, 2010

This healthy and simple Grilled Broccoli recipe was inspired by a comment Kristi left on my Grilled Chipotle Orange Chicken post way back when:

Elana, you mentioned you like to serve this yummy chicken with grilled broccoli. I’ve grilled other veggies but not this. How do you go about grilling broccoli? Thanks! Kristi

Thank you, Kristi! I hope you enjoy this grilled broccoli with my Grilled Chipotle Orange Chicken or another gluten free chicken recipe.

I’m thrilled to be a part of Pacific Natural Foods’ Everyday Chef Challenge!  For the first round of the competition, $5 Dinners, Aggie’s Kitchen, Herbivoracious, A Savory Nest and I will be using a “secret” ingredient along with one of Pacific Natural Foods’ broth products *.

The secret ingredient for this round?  Mushrooms.  I used shiitake, though any type will work for the recipe below.  And I have chosen to use their Organic Vegetable Broth.

Honey Mustard Dressing

Posted on September 13, 2010

My boys and I are very into salads right now.  And It’s my job to change it up with different and fun salad dressings to keep them interested.  The scrumptious salad above is 100% from my garden.  It includes a variety of lettuces, dino kale, tomatoes and cucumbers.  I love sending the boys out to “pick” a dish that we will be having for dinner, and it’s great to hang out in the kitchen with them while they wash and […]

Cauliflower Rice

Posted on September 10, 2010

I mentioned in my Stuffed Peppers post the other day that I would give you all the recipe for my Cauliflower “Rice.”   Around here, we call it Cauli Rice, and I’m super happy that my husband and children like to eat it as much as I do.  Cauli Rice is a tasty, nutritious, grain-free, alternative to white rice for those of us that follow a Primal or Paleo eating plan.  Works for the Atkins people too.

I’ve been making Cauliflower Rice […]

Mexican Chocolate Ice Cream

Posted on September 1, 2010

This Chocolate Ice Cream is perfect for summer’s end, which usually corresponds with the upcoming Labor Day holiday (stay tuned for a Healthy Labor Day Recipe Roundup post later this week!); the added spices warm up this vegan gluten free dessert for chilly Fall nights approaching.

My recipe is based on one from Elise of Simply Recipes –she has a great traditional Mexican Chocolate Ice Cream recipe that uses cream and eggs, which you might like to take a look at.

Vegan Herb Crackers

Posted on August 23, 2010

Finally, a gluten free cracker that is egg free as well!  Who do I have to thank for this tasty cracker?  Mark Sisson of Mark’s Daily Apple and author of The Primal Blueprint and The Primal Blueprint Cookbook.  I am a huge fan of Mark and his work.

Chocolate Sorbet

Posted on August 16, 2010

This gluten free, dairy free and vegan Chocolate Sorbet recipe is an oldie but goodie from my recipe archives. What are these archives of which I speak? A binder with more than a thousand of my unpublished recipes. Anyway, this frozen treat is one of my mother-in-law’s favorite gluten free desserts, and she asks me to make it every time she comes to visit us.

Chocolate Sorbet is a perfect treat for summer parties, makes a great dessert after a simple family […]

Grilled Portabella Mushrooms

Posted on August 9, 2010

We’re back in town after an amazing vacation and I just can’t get enough grilled veggies. These grilled portabella mushrooms are my husband’s favorite.

I’ve been grilling everything though –zucchini, broccoli and lots of chicken. I’ll be posting a recipe for grilled broccoli before summer’s end. My grill is getting a really good workout these days!

Grilled Zucchini

Posted on August 5, 2010

This recipe for Grilled Zucchini is one of my favorites for several reasons.  First, it’s a good way to use up the prolific zucchini of August.  Second, it’s mighty easy to make.  And third, it’s delicious.  Let’s not forget reason number four though –zucchini and summer squash are a healthy side dish for any meal.

Lately I’ve been serving this Grilled Zucchini with my Rosemary Lemon Chicken.  They make quite a summery pair, and along with a green salad comprise a […]
