When I was a child I loved crackers. Still do. I especially loved Wheat Thins. Can’t have those anymore. Solution? I’ve made my own. Way back when, in 1997, during the dark ages of gluten free, I was diagnosed with celiac disease. Now, 14 years later, this disease has had a devastating effect on my family –my mother has celiac, my sister has it, even my 12 year old son was diagnosed with celiac when he was 3 years old. I’m a bit of a cracker-a-holic. I think the quest for crunchy food intensifies when one goes gluten free. So, I’ve made a habit of baking crackers at least once a week, if not more. However, many cracker thieves dwell in my abode. As quickly as I make crackers they disappear. Therefore, some weeks, the cracker quest continues day in and day out.

I made these super healthy salt and vinegar kale chips the other night before dinner, and was shocked, I mean absolutely shocked, that my children ate them. These healthy Chardonnay Crackers have a deep, rich and buttery flavor. They’re great for everyday snacking or as an hors d’œuvre. I like that they’re high in protein and have good fats (due to the blanched almond flour) and full of antioxidants (in the Grape Seed Flour). They’re a wonderful recovery snack as well after a good workout!

Vegan Chocolate Espresso Power Bars made with pecans, dates and decaf espresso.
Who doesn’t enjoy a good power bar? One that is easy to travel with and renders a healthy snack on the go?
These gluten free Espresso Power Bars have a delicious espresso-chocolate-vanilla-ish flavor that makes them equally satisfying as a snack or dessert. I found mine were just a tad crumbly, you may need to add a dash of water to help yours hold together well.

I’m slightly addicted to these Vanilla Roasted Walnuts and so is my husband. They have a hint of sweetness and a nice burst of vanilla goodness. On top of that, Walnuts are a great source of Omega-3’s, have a high antioxidant count and are also beneficial for cardiovascular health. So I’m on the walnut bandwagon.

Here’s another recipe for delicious gluten free candied nuts. I love making candied nuts for the holidays. They’re the perfect gluten free dessert, appetizer or snack. And they make a great gift too.
