There was a distinct chill in the air last night which lead me to put on slippers and make a cup of gluten free, dairy free hot chocolate. This quick and easy beverage can be simply made from scratch in a matter of minutes.
¼ cup (raw) cashews

As fall approaches, my attention is shifting to our fruit trees. A few years back we planted a peach and two apple trees along the perimeter of our packed yard; they are now bursting with fruit, as is our dwarf plum. I confess. I ate the photo shoot. I made a huge salad this afternoon, drizzled it with Green Goddess Dressing and proceeded to devour it. The food prepared for photographing was instead inhaled. As in, scarfed immediately.

Baseball is indeed over. However, all-stars have begun and my son and several of his little cohorts are on the team. We are now therefore faced with practice daily from 5:30 to 7:30. Thank goodness I am not coaching!
I will however, be providing the team with lots of snacks and good beverages such as the one below. This scrumptious iced tea really hits the spot on a summer’s day. It is sweet, lemony and refreshing.

We are in the middle of our little league baseball tourney (presently in quarterfinals) and play tonight to see if we can advance to the semis. My older son has been playing first base while the little one is bat boy.

Rich and decadent Rosemary Chocolate Truffles rolled in cocoa powder.
Last night was the conclusion of a “grand” Memorial Day weekend. My parents came in and took the boys down to the Boulder Creek Fest where they all had a blast. There was much spoiling –meals out, bowling, batting practice at the amusement park and overall non-stop fun. A perfect weekend with the grandparents.

I have been guzzling gallons of my favorite summer beverage during this hot spell. It’s another easy one, and better yet, has no sugar or artificial sweeteners.
How’s that possible? See for yourself…
2 quarts water
¼ cup lemon juice (fresh squeezed)
4 dropper-fulls stevia
Fill a 2 quart mason jar with water, almost to the top, leaving 2 inches of space for other ingredients
