I took the picture for this tasty apricot salad dressing after my first day at the Food and Light Photography Workshop that I attended here in Boulder, Colorado. I came home, made dinner and decided it would be good to put some of my newly acquired skills to use.

This vegan mayonnaise has quickly become a family favorite. I based the idea on a recipe I found in an old issue of Martha Stewart Living. I happened upon an interesting recipe for a peanut salad dressing, made several adaptations until I ended up (somewhat accidentally) with this scrumptious gluten free, egg-free vegan mayo which is delicious on my Kaleslaw.
Marcona Almond Mayonnaise
¼ cup apple cider vinegar
1 tablespoon agave nectar
½ cup olive oil
2-4 tablespoons marcona almonds

I confess. I ate the photo shoot. I made a huge salad this afternoon, drizzled it with Green Goddess Dressing and proceeded to devour it. The food prepared for photographing was instead inhaled. As in, scarfed immediately.
Now normally, I’m a fairly disciplined person, so this was a bit odd. Maybe I exercised a little too hard this morning and worked up a bigger appetite than usual. Maybe the dressing is delicious on a hot summer’s day. Who ... read more →
