I was recently invited to develop an appetizer recipe for the Mushroom Masters, a global competition that helps celebrate National Mushroom Month (September). Since I love mushrooms, and they are so easy to prepare gluten free and Paleo, I jumped at the chance to participate.

I have a huge parsley plant in our backyard that came back from last year and so have been looking for ways to utilize this super nutritious green herb in different dishes. Traditionally, pesto is made with basil. This time of year, it’s not so easy to find organic basil at a reasonable price. Really, the time for basil is summer. And we’re definitely not there yet. Not even close, out here in Colorado.
