Posted on October 8, 2014

My teenage boys love these Pumpkin Spice Meringues. They plowed through batch after batch as I tested them. Yes, the boys are not only cookie lovers, they are meringue cookie lovers and devour my baking recipes. Right now they are asking for my Paleo Pumpkin Pie a couple of times each week. Of course I oblige! I am completely obsessed with pumpkin recipes, and especially pumpkin desserts now that fall is here.

This Pumpkin Spice Smoothie is perfect for fall! It’s also great for those times when you’re in the mood for a Pumpkin Pie but don’t want to go through the hassle of baking one. It’s made with baked pumpkin or squash. Remember, a pumpkin is a squash. For the smoothie depicted above I actually used one cup of red kuri squash. When the weather gets a little chilly I tend to bake a pumpkin or squash a couple of times per week ... read more →

How to Make Pumpkin Spice Lattes

Posted on October 17, 2012

Filled with freshly ground cinnamon and other antioxidant rich spices, I serve healing Pumpkin Spice Lattes piping hot.

Now you can make your own dairy free Pumpkin Spice Latte with coconut milk instead of cow’s milk. Make this beverage low sugar as well by using honey and stevia in place of refined sugar. I based my recipe on the Pumpkin Spice Latte from recipegirl.com. Lori’s site, gorgeous and hip, is a wonderful source of inspiration.

Pumpkin Pie Ice Cream

Posted on October 28, 2010

Let us now praise all things pumpkin.  I’m kinda obsessed with gluten free, dairy free pumpkin dishes right now, hence the vegan Pumpkin Ice Cream here, and the Pumpkin Bars earlier this week.  And let us not forget the Pumpkin Pie Muffins of last year either.

This pumpkin pie ice cream is a delicious fall treat whether served at Halloween or Thanksgiving.  For more information on pumpkin mania, check out this funny article from Esquire called Some Pumpkin Flavoring Best Avoided ... read more →

Pumpkin Bars

Posted on October 25, 2010

In honor of fall, I spent several days last week in a pumpkin “trance,” experimenting with various iterations of gluten free baked goods containing pumpkin.

At first, I had terrible failures. Suffice it to say that my pumpkin cookies and pumpkin scones while edible, were not at all blog worthy. Next, I decided to make pumpkin loaves –while they didn’t look too pretty, they were delicious. Finally, I made these gluten free pumpkin bars, which my 10 year old declared “addictive.”  Every day last ... read more →

Carrot Kugel

Posted on March 19, 2010

Carrot Kugel –who would have thought of that? Well, the fabulous Lisa Stafford, that’s who. Lisa recently posted her recipe for Carrot Souffle in the forums and here’s what she had to say about it:

“I made this dish Tuesday night and had some with our meat and salad. I warmed some up in the toaster oven for lunch on Wednesday. Before I put it away, I tried it cold. Oh my goodness! I like it cold much better. It reminds me of ... read more →

Vegan Eggnog

Posted on November 13, 2009

I can’t count the number of times I’ve been asked for a vegan eggnog recipe.  This gluten free, dairy free (egg free) eggnog is not too challenging to make and full of filling rich yumminess.

Unlike other eggnogs, it’s not too sweet and has a nice delicate nutmeg flavor.  If you want to decrease the sweetness further, go with only 1 tablespoon of agave in the recipe below, or eliminate it entirely.  You’ll still have the natural sweetness of the almonds ... read more →

Pumpkin Custard

Posted on October 22, 2008

Getting into the spirit of the season, I whipped up this no bake gluten free and vegan pumpkin custard. Quick and easy to make, it is also dairy free and the perfect way to end an autumn meal.

I am on a major pumpkin kick right now as is the rest of the family.  Last weekend, my husband took the boys and their friend Josh to purchase pumpkins for Halloween; upon return the three little ones spent hours in the back ... read more →

Pumpkin Pie Muffins

Posted on October 17, 2008

These gluten free Pumpkin Pie Muffins are, of course, a favorite of my younger son. When he was little, he ate so much pumpkin and winter squash that he turned a slightly orange hue. Luckily, he’s back to normal now.

I often forget how much I love cooking with pumpkin until fall arrives.  Well, fall is back and I have been using this vegetable with a vengeance.

Squash “Pie”

Pumpkin Cranberry Upside-Down Cake

Posted on November 12, 2007

My son’s viola teacher, Sandra, asked for advice regarding traditional Thanksgiving family fare. The next thing I knew, she had given me a copy of a recipe for Pumpkin Cranberry Upside-Down Cake featured in Sunset Magazine’s November 2007 issue. I made several changes to it, most notably removing the sugar, dairy and gluten and was pleased with the results.

This dessert is a rich, moist cross between a pumpkin cake and a pumpkin pie. Perfect for that post-Halloween, pre-Thanksgiving time ... read more →

Valentine’s Day Cookies

Posted on February 13, 2007

We have been working away on our Valentine’s cookies this week. The ones pictured above are my younger son’s.

This recipe for heart shaped sugar cookies is gluten and dairy free, Paleo/primal friendly and does not use refined sugar. Further, this cookie recipe uses coconut oil, of which I am a big fan.

My older son did not want to give out paper valentines, so he made cookie valentines, as pictured above. Because the children in his class have a myriad of ... read more →
