Baked Mustard Lime Chicken

Posted on March 15, 2012

Serve tangy Mustard Lime Chicken for dinner with a side of asparagus, or any other healthy green vegetable.

I’m always on the lookout for quick and easy recipes for chicken breast, so I was mighty happy when a reader left this comment on my post for grilled Mustard Lime Chicken:

Fantastic chicken! Our son was just diagnosed with Celiac Disease about one month ago, and I have to tell you that your recipes have been such a help. We all loved the […]

Honey Mustard Dressing

Posted on September 13, 2010

My boys and I are very into salads right now.  And It’s my job to change it up with different and fun salad dressings to keep them interested.  The scrumptious salad above is 100% from my garden.  It includes a variety of lettuces, dino kale, tomatoes and cucumbers.  I love sending the boys out to “pick” a dish that we will be having for dinner, and it’s great to hang out in the kitchen with them while they wash and […]

Apricot Salad Dressing

Posted on July 5, 2010

I took the picture for this tasty apricot salad dressing after my first day at the Food and Light Photography Workshop that I attended here in Boulder, Colorado. I came home, made dinner and decided it would be good to put some of my newly acquired skills to use.

The instructors at Food and Light were amazing. Jen from userealbutter.com organized the entire affair and taught a wonderful section of the workshop on basic photography skills, which some of […]

Mustard Marmalade Dressing

Posted on October 19, 2009

I’ve been busy with my book (The Gluten-Free Almond Flour Cookbook) lately and pumping out quick dinners.  Still, I make my own salad dressings every night and this Mustard Marmalade Dressing is no exception.

I’m just back (less than an hour ago) from the ADA conference in Denver where I met many wonderful people and had a great time.  The conference was at the Denver convention center and it was massive –there were probably 5,000 people there, maybe more and thankfully, […]

Turkey Club Sandwich

Posted on July 8, 2009

Here is one of my favorite sandwiches –the Turkey Club.  It’s a sandwich on Nutty Bread with avocado, mustard and of course, turkey.  It’s hot here, so I’m very happy to make sandwiches for dinner and not have to spark up the oven, stove or grill.

These gluten-free sandwiches are full of protein and tasty to boot.  For me, the avocado makes a great whole food substitute for mayo (I’m not in the mood to make homemade mayo today either, though […]

Mustard Lime Chicken

Posted on July 15, 2008

It’s too darn hot here to turn on the oven; the high today is supposed to get up to 100°. The solution? Fire up the grill and throw on some chicken breasts ever so briefly. The mustard lime chicken pictured above is a tangy hit of protein on a hot summer’s day.

I hope it cools off a bit tomorrow as my son plays in the finals of the little league tournament. His team (the “B” team […]

Spinach Salad with Pistachios

Posted on May 13, 2008

Well, Mother’s Day was gorgeous. A warm and balmy 70°, we went for a lovely hike and after that, I prepared a big dinner for my husband, the boys, our friends Chris and Larry and their little ones. We had Chicken Marbella (delicious) and a big spinach salad. Chris helped me to surreptitiously photograph the salad above as the hub does not like it when I take food pics whilst we have guests visiting for a meal. […]

Dogs In a Garden

Posted on July 27, 2007

The boys have declared a salmon boycott and reserved their right to eat an alternate protein on salmon night.

Tonight, my younger son chose to exercise his boycott with a hot dog, organic turkey, of course; not to sound snobby, but I make quite certain that when my children eat animal products, they are from clean sources (no hormones, pesticides, antibiotics).

He sat staring at the hot dog on his plate for a moment, then looked up at me and said, “Mommy, […]
