Tonight is the Oscars and we’re having a nice little party over here (as usual). I’ll be serving this super quick and easy gluten free Mushroom Soup in little shot glasses. As you can probably tell by now, pretty much any event is an excuse for me to have people over and cook healthy gluten free food.

We’re back in town after an amazing vacation and I just can’t get enough grilled veggies. These grilled portabella mushrooms are my husband’s favorite.
I’ve been grilling everything though –zucchini, broccoli and lots of chicken. I’ll be posting a recipe for grilled broccoli before summer’s end. My grill is getting a really good workout these days!
Grilled Portabella Mushrooms
3 large portabella mushrooms
2 tablespoons olive oil
1 teaspoon celtic sea salt
Clean mushrooms and cut off stems
Rub mushrooms with olive oil
Grill 4-5 minutes on each side

The other night I went to a fabulous event in Boulder hosted by Bauman College. During this evening one of the graduates from Bauman’s chef program did a great cooking demo for a raw kale salad with shiitake mushrooms (it had a number of other ingredients as well).

Mushrooms are one of my favorite foods. I bought some recently on a trip to the store, though I had no idea what would become of them.
