Many of you had questions about Marcona almonds when I posted my recipe for Marcona Almond Mayonnaise, so I thought I would take the time to provide some answers. Here’s the first question from one of my favorite readers:
“Is there a difference in taste or texture between Marcona almonds & regular almonds? I know the Marcona almonds are from Spain so maybe (and hopefully) these are truly raw almonds (they’re not so obsessed with pasteurization in Europe).”

This vegan mayonnaise has quickly become a family favorite. I based the idea on a recipe I found in an old issue of Martha Stewart Living. I happened upon an interesting recipe for a peanut salad dressing, made several adaptations until I ended up (somewhat accidentally) with this scrumptious gluten free, egg-free vegan mayo which is delicious on my Kaleslaw.
Marcona Almond Mayonnaise
¼ cup apple cider vinegar
1 tablespoon agave nectar
½ cup olive oil
2-4 tablespoons marcona almonds

My garden is overflowing with kale so I am looking for creative ways to serve it to the boys. Of course, their favorite kale dish is the Kale Salad with Cranberries, however, we can’t have that every night so I came up with this delicious gluten free Kaleslaw. The boys liked it and ate some, I myself had about 4 bowls of it –addictive I’d say.
