Celebrate fall with gluten free muffins made from freshly roasted pumpkin and coconut flour, along with a glass of almond milk.
If I had a grain free muffin of the month club November would be pumpkin spice muffins. September would be banana muffins and May would be blueberry muffins. Of course, I have no such club, however, I do love a good healthy muffin.

Now you can make your own dairy free Pumpkin Spice Latte with coconut milk instead of cow’s milk. Make this beverage low sugar as well by using honey and stevia in place of refined sugar. In a break from all inauguration news all the time, I present you with these chewy, yet crispy ginger cookies!
2 ½ cups blanched almond flour
½ teaspoon celtic sea salt
1 teaspoon baking soda
2 tablespoons ground ginger
½ cup grapeseed oil or palm shortening
¼ cup yacon syrup
½ cup agave nectar or honey
1 tablespoon lemon zest
In a large bowl, combine almond flour, salt, baking soda and ginger
