Pumpkin Ginger Soup

Soup mania continues.  And this dairy free creamy pumpkin coconut ginger soup hits the spot.  I decided I had to make something pumpkin today after making pumpkin pies from my gluten free cookbook (The Gluten-Free Almond Flour Cookbook) and finding myself with a bunch of leftover roasted pumpkin.  Of course soup was the easiest thing to make after making one too many pumpkin pies for family and friends.

2 ½ cups blanched almond flour
½ teaspoon celtic sea salt
1 teaspoon baking soda
2 tablespoons ground ginger
½ cup grapeseed oil or palm shortening
¼ cup yacon syrup
½ cup agave nectar or honey
1 tablespoon lemon zest

These gluten free Pumpkin Pie Muffins are, of course, a favorite of my younger son. When he was little, he ate so much pumpkin and winter squash that he turned a slightly orange hue. Luckily, he’s back to normal now.

The other day we had friends over and made tons of gluten free gingerbread men cookies. So many little hands rolling and cutting out dough. We decorated our gingerbread men with dried fruit and nuts. The kids even cut loose and made free form cookie shapes as well.

If you like shrimp, try this paleo recipe for Curried Shrimp. The larger than life flavors meld together in this succulent and healthy curry dish.

Curried Shrimpprint
4 tablespoons olive oil
4 cloves garlic
1 medium onion, chopped
½ cup tomatoes, pureed
2 teaspoons fresh ginger, minced
½ teaspoon cumin
½ teaspoon coriander
½ teaspoon turmeric
1 bunch cilantro, finely chopped
1 pound large shrimp, peeled
3 tablespoons lime juice, freshly squeezed
