Blueberries and Cream Cupcakes

Posted on May 21, 2010

The idea to make these gluten free Blueberries and Cream Cupcakes came from the book Martha Stewart’s Cupcakes. You can view her original recipe over at ivillage.com.  While testing, the boys and I were referring to these yummy little gluten free treats as blueberry shortcake cupcakes and as you can imagine, the 3 of us enjoyed every bite.

My husband, unfortunately, was not privy to a tasting of these gluten free cupcakes since he was on an extended business trip […]

Flourless Chocolate Cupcakes

Posted on May 14, 2010

Here’s a quick and easy dessert that will wow your guests whether they’re gluten free or “full of gluten”. This Flourless Chocolate Cupcake recipe is dark and rich –my husband absolutely loved it.

He is really benefiting from the Elana’s Pantry month of cupcakes, given that he is my primary taste tester. And thankfully he enjoyed this treat as much as, or even more than, the last (Banana Cream Pie Cupcakes) –though that’s not much of a surprise since he’s quite the […]

Jelly Donut Cupcakes

Posted on May 4, 2010

In honor of Celiac Awareness Month, I have decided to make May my own personal cupcake month.  Today’s post is Jelly Donut (or Doughnut) Cupcakes, and I’m going to attempt to do a gluten free cupcake recipe every time I post in May –wish me luck!

These gluten free Jelly Donut Cupcakes are filled with yummy raspberry jam and oozing with fruity goodness.  My husband liked them so much that he took the entire batch to his office to (hopefully) share […]

Riesling Biscuits

Posted on April 30, 2010

A while back, I posted a recipe for Cabernet Cookies, using Cabernet Grape Seed Flour from AprèsVin. I thought they turned out very well –not too sweet, full of antioxidants and rich, dark chocolate; basically, my family was hooked.

Recently, I was reviewing the comments for that post and saw this one that Jenné from sweetpotatosoul.blogspot.com left.  In it she mentioned making some cookies with grapeseed flour, so I hopped over to her blog and to take a peak. Jenne had […]

Almond Joy Chocolate Bark

Posted on April 20, 2010

I’m slightly obsessed with Mounds and Almond Joy this week.  I’ve been making tons of coconut, chocolate and almond recipes the last few days.

So far, this one for gluten free Almond Joy Chocolate Bark is my family’s favorite.  I like the way the toasted coconut adds a tiny crunch to the bigger crunch of the almonds, all of it enrobed in delicious dark chocolate, of course.  Go ahead and try some, see for yourself!

Lemon Poppy Seed Bunny Cookies

Posted on April 2, 2010

The idea for these delicious gluten free Lemon Poppy Seed Bunny Cookies for Easter came from Gluten Free Foodie Heaven and her Lemon Poppy Seed Bunnies recipe.  Even though we don’t celebrate Easter, I thought they were very cute and springlike and had to make some of my own with the usual favorite ingredients that I keep on hand.

Peppermint Patties

Posted on March 12, 2010

These healthier and vegan Peppermint Patties only have four ingredients.

Ok, when the idea of Peppermint Patties first crossed my mind I was not enticed.  “Chocolate and mint?” I said, “That sounds like toothpaste, not food.”

Well, a few weeks later, the idea lingered, gnawingly and I decided I just had to make those Peppermint Patties.  So I did.  And they are good.  Even to someone who does not care for the idea of chocolate and mint.   Someone who is Jewish and […]

Double Chocolate Orange Torte

Posted on March 9, 2010

This gluten free Double Chocolate Orange Torte will make a nice treat for Passover, which is rapidly approaching!  My family, however, needed no holiday or excuse to devour the entire cake on a Sunday afternoon.  This treat is easy to make and even easier to eat.  Go ahead, try some and see for yourself.

Mounds Candy Bars

Posted on February 23, 2010

These healthier mounds bars are a quick and easy homemade chocolate and coconut candy.

We will be making these yummy gluten free candy bars for Purim which is coming up this week.  Of course, we also plan on making Hamantaschen as well, which is one of the boys’ fave treats.

These mounds bars are easy to make and rich with dark chocolate and a coconut filling consisting of shredded coconut, coconut oil and agave.  My older son downed them and thought […]

Cabernet Cookies

Posted on February 17, 2010

I’m still on my grape seed flour kick and made these yummy Cabernet Cookies the other day which were “all gone” quite quickly.  If you like the combination of red wine and chocolate, be sure to give these treats a try.

Grape seed flour is full of antioxidants, fiber and protein and adds a nice flavor and texture to baked goods.  I’m loving experimenting with it these days.  One more super food to add to the repertoire.

Chocolate Chip Cookies with Grapeseed Flour

Posted on February 12, 2010

These yummy little protein-a-licious cookies are the result of a complimentary sample of Chardonnay Grapeseed Flour that I received from Eric Leber of AprèsVin.  Grapeseed flour?  Yes, you heard it right, grapeseed flour.

While these treats look like they are double chocolate chip cookies, they actually are not.  It is high protein, antioxidant rich grapeseed flour that gives them their nice dark color.  And yes, grapeseed flour comes in different flavors.  This chardonnay grapeseed flour has a buttery taste and graham […]

Magically Moist Cherry Apricot Cake

Posted on February 9, 2010

My husband loves this simple, moist gluten free Cherry Apricot Cake. I make sure to use organic dried fruit in this dessert since pesticides levels tend to be high in conventional cherries and apricots and more concentrated in dried fruits. I often purchase my organic dried fruit at the local health food store, Vitamin Cottage; for more “hard to find” ingredients such as organic dried cherries (sans added sugar) one of my favorite sources is an online company […]

Chocolate Raspberry Bonbons

Posted on February 5, 2010

Valentine’s Day is approaching, which means lots of bad candy and useless merchandise will be sold in the next week or so.  Over here, we’re having fun making our own (healthier) candy –especially these Chocolate Raspberry Bonbons.

My boys made an entire batch of these sweet confections last night and had a great time.  They love taking over my candy projects, the little rascals! I like making these too.  Using a small paint brush to spread the melted chocolate into the […]

Nut Butter Cups

Posted on February 2, 2010

A healthier version of the classic peanut butter cup, homemade nut butter cups or balls make the perfect chocolate candy.

When I posted the recipe for Vanilla Almond Butter I had planned on sharing my Nut Butter Cup recipe with you shortly thereafter.  My children however, hijacked the Nut Butter Cups the night I tried to make them (with exact measurements for you all, of course).  They hacked my project, dumping loads of chocolate chips into the pot (for melting) […]

Lemon Lavender Cookies

Posted on January 12, 2010

I think I’m on a bit of a vegan kick these days.  First came the Marcona Almond Mayo sans eggs and now these vegan Lemon Lavender Cookies.

Don’t worry, even though this recipe sounds a tad weird, it’s subtle and I think, delicious.  It kinda reminds me of the recipe in my gluten free cookbook for Rosemary Hazelnut Cookies.

Molasses Spice Cookies

Posted on January 5, 2010

These cookies were inspired by Dorie Greenspan’s delicious looking Molasses Spice Cookies which I saw in a recent Parade Magazine.  I read Parade every weekend (it comes in our local paper), and I especially enjoy checking out the recipes in it and then renovating them for my gluten free higher protein desires.

Spice cookies are perfect for this time of year, a little zing and boost after the holidays and warming as well, which is nice given all of the cold […]

Cranberry Bars

Posted on October 28, 2009

These tart and tangy Cranberry Bars are one of my favorite treats.  I’ve been craving cranberries lately and this gluten free dessert more than hits the spot when it comes to mouth puckering goodness.

I first made these Cranberry Bars as a tart.  That was before Robyn and her children came over to have an afternoon of baking with us last week; she suggested making this as a bar, so it would more readily make an on-the-go type snack.  Robyn is […]

Cranberry Walnut Chocolate Chip Cookies

Posted on October 7, 2009

This scrumptious fall twist on the classic chocolate chip cookie is a big hit in my household.  The tart dried cranberries and nutty, roasted goodness of walnuts, along with nutrient dense almond flour turn a plain old chocolate chip cookie into an antioxidant rich, nutritious treat.
