During winter I roast vegetables several nights per week. I learned in my Ayurvedic training during the early 1990’s that it’s important to adapt both cooking and eating to the seasons. Mostly, though, it’s just common sense to eat local root vegetables in the winter (this is one of my favorite carrot recipes) and to run a nice toasty oven on a cold evening.
Roasted vegetables are an amazing dish –affordable, easy to make, and quite healthy. One of the best things about this Roasted Cauliflower, Carrots, and Zucchini is the beautiful mini-rainbow of colors the vegetables in this dish create.
So if you’re looking for a roasted vegetable recipe, take a peak at this one –it’s perfect for the most seasoned of chefs, as well as beginner cooks. Personally, I think this is the best way to cook zucchini and carrots… and cauliflower too!

In my opinion nature’s bounty of beautiful, nutritious vegetables is completely underrated. And beets are a perfect example of this. They brighten up any meal with their gorgeous earthy reddish-purple color and are highly nutritious to boot.

I made these super healthy salt and vinegar kale chips the other night before dinner, and was shocked, I mean absolutely shocked, that my children ate them. Not only did they boys eat these, they loved them. Trust me, while these kale chips are healthy, this is a sophisticated flavor combination for children.

I love kale. My boys love kale. Even my husband goes for it. Kale is a universally favorite vegetable in our family. And boy am I lucky since it’s a superfood. Given our collective kale obsession, I am always looking for more ways to cook kale, and this is one of my favorites.

My boys love these carrot fries hot out of the oven. I like baking them as it eliminates the messy splattering that results from the typical preparation of French fries –frying.

Oven Roasted Broccoli is a quick, easy and super healthy dish for your entire family.

We’re back in town after an amazing vacation and I just can’t get enough grilled veggies. These grilled portabella mushrooms are my husband’s favorite.
I’ve been grilling everything though –zucchini, broccoli and lots of chicken. I’ll be posting a recipe for grilled broccoli before summer’s end. My grill is getting a really good workout these days!
Grilled Portabella Mushrooms
3 large portabella mushrooms
2 tablespoons olive oil
1 teaspoon celtic sea salt

I confess, I have an addiction to broccoli rabe. I love the bitter flavor of this delicious green vegetable. I have always believed that bitter is such an important, yet under rated flavor in our culture.

We are loving these Lemon Kale Chips. I can’t make enough of them –the boys scarf them down hot out of the oven. Yesterday, they ate 3 batches, yes you heard that right, 3 batches of kale chips, after school. Of course, like everything else I make, these are gluten free.
You can use curly kale (as in the photo above), or dino (lacinto) kale or any other type. My boys say it is best with the curly kale.
