Mint Chip Truffles

Posted on September 11, 2012

Gluten free dairy free Mint Chip Truffles are full of healthy fats to keep your motor running.

These low-carb healthy Mint Chip Truffles are a fantastic Paleo snack. In fact, I love to eat them right after I work out (my workouts, which I do several times per week are long walks, very light weight lifting, Pilates and yoga). However, they’re also the perfect post workout snack for high-intensity athletes such as CrossFitters.

On top of that? They’re a great Paleo dessert […]

Posted on February 24, 2011

Happy Birthday Dad!  These gluten free cupcake bites are all the rage right now, very popular.  And since you’re celebrating a big birthday, I thought I would make up a batch in your honor.  With love, here are some delicious, mostly healthy, gluten free cupcake bites for you!

Dad, I warn you, these are not easy to make, so don’t try this at home!   Maybe Mom can make some for you to tide you over until I get there for the […]

Valentine’s Day Cake Pops

Posted on February 1, 2011

All of you regular readers know that I have an obsession with making healthy (ok, “healthier”) gluten free cake pops.  Well, this obsession continues for Valentine’s Day.

I spent an afternoon in my kitchen last week in total chocolate chaos.  I even tweeted about it (if you’re not involved in the party that’s over on twitter you may want to join, I’m there several times daily, tweeting away).  On twitter I stated, or shall I say, tweeted,  “my kitchen is covered […]

Orange Dark Chocolate Chip Scones

Posted on January 24, 2011

It really is Joy the Baker’s fault.  I have been baking scones every day since I read her post for Orange and Dark Chocolate Buttermilk Scones.  I knew I would have to make my own gluten free version.  So I did.  And it’s scone mania over here.  It’s gotten so bad that last weekend I made 5 batches of scones.  All gluten free of course.

Joy, I wish I was your gluten free neighbor.  And by the way, I do not […]

Gluten Free Cake Pops

Posted on January 12, 2011

Gluten Free Cake Pops dipped in antioxidant rich dark chocolate.

This recipe for cake pops is one of my favorite gluten free desserts and can also be considered a gluten free candy.

I bought Bakerella’s fabulous book Cake Pops: Tips, Tricks, and Recipes for More Than 40 Irresistible Mini Treats just after Thanksgiving.

Our chavurah came over for Shabbos dinner one night in early December and my friend Paige brought over a bunch of leftover cake balls that she had made from […]

Chocolate Sorbet

Posted on August 16, 2010

This gluten free, dairy free and vegan Chocolate Sorbet recipe is an oldie but goodie from my recipe archives. What are these archives of which I speak? A binder with more than a thousand of my unpublished recipes. Anyway, this frozen treat is one of my mother-in-law’s favorite gluten free desserts, and she asks me to make it every time she comes to visit us.

Chocolate Sorbet is a perfect treat for summer parties, makes a great dessert after a simple family […]

Chocolate Chip Cookies with Yacon

Posted on July 15, 2010

So all you agave haters gather round.  These gluten free chocolate chip cookies are completely free of agave, I have used yacon instead.

What is yacon?  It is a perennial root, composed primarily of water and Fructooligosaccharide (FOS). These short chain sugars have a lower caloric value (as they are digested anaerobically) and high fiber content. FOS is a prebiotic that is extremely helpful with digestion.

I use yacon as my “brown sugar” or “molasses” in my recipes.  For example, in […]

This chocolate “dirt” is perfect for dusting cakes and cupcakes.  It’s made from one simple ingredient –chocolate chunks and super easy to prepare.

I recently used this dirt to dust the Whipped Cream Frosting on my Banana Cream Pie Cupcakes.

Peppermint Patties

Posted on March 12, 2010

These healthier and vegan Peppermint Patties only have four ingredients.

Ok, when the idea of Peppermint Patties first crossed my mind I was not enticed.  “Chocolate and mint?” I said, “That sounds like toothpaste, not food.”

Well, a few weeks later, the idea lingered, gnawingly and I decided I just had to make those Peppermint Patties.  So I did.  And they are good.  Even to someone who does not care for the idea of chocolate and mint.   Someone who is Jewish and […]

This gluten free Double Chocolate Orange Torte will make a nice treat for Passover, which is rapidly approaching!  My family, however, needed no holiday or excuse to devour the entire cake on a Sunday afternoon.  This treat is easy to make and even easier to eat.  Go ahead, try some and see for yourself.

Cabernet Cookies

Posted on February 17, 2010

I’m still on my grape seed flour kick and made these yummy Cabernet Cookies the other day which were “all gone” quite quickly.  If you like the combination of red wine and chocolate, be sure to give these treats a try.

Grape seed flour is full of antioxidants, fiber and protein and adds a nice flavor and texture to baked goods.  I’m loving experimenting with it these days.  One more super food to add to the repertoire.

German Chocolate Cake Revised

Posted on February 17, 2009

We will be making this gluten free German Chocolate Cake (and many other dishes) in my next cooking class at the Culinary School of the Rockies, March 17th.  If you want to sign up there is still some space left.

As we all know, there are many ways to make German Chocolate Cake.  An entire chocolate cake can be frosted with a coconut pecan icing as I did a while back in this post.  Alternatively, the sides of the cake can […]

Chocolate Cake

Posted on March 18, 2008

A decadent dessert recipe that’s high protein, gluten free, dairy free and nut free.

Yes, I continue to roll out the coconut flour recipes. This time it’s gluten free Chocolate Cake. I am having a great time experimenting with this unique flour. I have been doing so for almost two years now and have created a small stockpile of recipes that work well with its light and fluffy texture.

This gluten free, dairy free chocolate cake (nut free too) is a […]

Product Review: Dagoba Chocodrops

Posted on March 15, 2007

Have you heard? Chocolate is good for you! Dagoba Chocodrops are made with 100% organic ingredients and are fair trade certified.

These chocodrops have a high cacao content (73%) and are quite flavorful with just a hint of sweetness.

Dagoba organic chocodrops are small (dime sized) discs. Use them in your favorite cookie recipe or have a handful with nuts as a quick pick-me-up, afternoon snack. Delicious!
