This Paleo Chicken Noodle Soup is super easy if you have chicken stock on hand.
It’s a gray day here in Boulder and I decided some soup would be in order. Chicken Noodle Soup to be exact. So what’s a gluten free grain free girl to do for noodles? Zucchini. Yes, DIY zucchini noodles.

This gluten free Grilled Lemon Chicken recipe from Ina Garten’s Barefoot Contessa cookbook is easy to make and amazingly delicious.
I cut her recipe in half and it was not nearly enough for my family. They licked their plates clean and my little one asked if we could have the chicken again the next night for dinner –and he’s a guy that complains about lack of variety, so you get the idea here.

My boys and I love eating this sauce over fish and chicken. It’s also great on top of salads. Now that we’re settled back in after a wild weekend that took us straight from Blogher into Yom Kippur, I will be making this to serve with our dinner tonight. I’ll serve it over salmon and greens and I know that the boys will lap it up, as they always do.

The other night I was craving a simple, rich and super creamy dressing for our salad. I also wanted something dairy free, so decided I would use avocado as a base.
This dressing is great for both green salads and chopped salads, and I made a combination of both to serve with our salad, using greens from our garden and cubes of cucumber. My husband gave this dressing his seal of approval, emptying out the mason jar in which I had ... read more →

My younger son is a big fan of my Chipotle Orange Chicken and asks me to make it on a weekly basis. Since it’s perfect grilling weather, I decided to make a version of this recipe with chicken breasts that could easily be thrown on the grill –just in time for when they arrive home from baseball practice.
Yes, we’re back in baseball season, this time it’s fall ball.
I like to serve this tangy, gluten free chicken dish with grilled broccoli. ... read more →

I have been craving a good, healthy, tasty, gluten free bran muffin for quite some time. Finally, thanks to flaxmania (I’m on a string of flax recipes this week) here it is.
My friend Chris was one of my guinea pigs for this baking endeavor. She took a flax muffin home from my house one day and ate it the next for breakfast. Later, I received a phone call from her requesting this recipe. I take that as a good ... read more →

This moist festive dessert is a perfect healthy treat for your holiday celebrations.
Yum. Gluten Free and Dairy Free Orange Cake. There’s something special about oranges. Such a simple fruit yet, bursting with flavor and possibility, they remind me of winter, specifically Christmas.
A while back I told ~M, one of my favorite readers, that I would post my version of Claudia Roden’s Gateau a l’Orange. This moist festive gluten free orange cake makes an ideal dish for holiday celebrations.

Kelly over at Celiac Chicks does a fabulous job covering the latest in gluten-free news. On top of that, she is a lovely person. It has been great getting to know her through our email conversations these past few months.
I recently spent some time looking through the recipe section of Kelly’s site and was most intrigued by these delicious looking peanut butter bars. She traces the original recipe back to one from 2003 in Family Circle magazine. Of course, she ... read more →

Spring is in full bloom here in Colorado and it’s gorgeous. Bright clear days in the high 70’s, perfect for hiking, taking the boys to the park and breaking out the grill! While the lucky folks in California probably start grilling a bit earlier, we usually wait until May to fire ours up.
Luckily, Katie had me on my toes with a request for gluten free barbecue sauce a couple of weeks ago. She was looking for something ... read more →

Hanukkah is a day away and that means only one thing: fried food! Lots of it. Yum. I love a good crispy latke, or just about anything fried for that matter.
Below is my favorite recipe for latkes. I have been making these gluten-free latkes for 5 plus years and my family still rejoices each Hanukkah when I serve them.

During our chat, we touched on the significance of children breaking bread together and sharing in the most important part of ... read more →

Say hello to Kale with Cranberries! This salad recipe contains: kale, a cancer fighting superfood packed with flavonoids; cranberries, high in vitamin C; and pine nuts, the edible seed of the pine tree, and higher in protein than any other seed.
